For Broiled or Fried Fish.

Blend one tablespoonful each of flour and butter, then add slowly one cupful of boiling water and cook smooth. Beat an egg light and pour the hot mixture over it very slowlv, stirring the while. Cook one minute, take from the fire and beat in a tablespoonful of minced parsley, a teaspoonful of chopped capers and a pickled onion chopped fine. Season with salt and a quarter teaspoonful of French mustard, pouy over the fish and garnish with slicep lemon. Serve at once.
