Codfish Hash.

Hashed codfish is a variation of the familiar "balls,” which is easier to prepare, and to many minds, more dainty. It makes a good breakfast change now and again. Put the salt fish over the flrefin cold water, and when it begins to boil take it from the water and shred it. Mix it with as much mashed potatoes as fish. Add a teaspoonful of butter and a tablespoonful milk to each cup of potato. Melt a tablespoonful of butter in the pan and put in the fish. Cook without stirring until a brown crust forms on the bottom. Fold like an omelet and serve with little foldovers of buttered brown bread.
