OCTOBER 4, lK AXD iiOSS. PLANTING STRAWBERRIES IN ATJTCJI.W If a man has strawberry plants in his own garden or conveniently at hand, so that he can select a raiDy day for the operation, then fall-planting will do very well. But to send a distance for the plants and have to take the chance of having them arrive in good order, and at a time suitable for planting, it becomes a rather uncertain operation. Spring appears to be the proper time for removing such delicate planfs, unless one can chose favorable weather for transplanting. We have set out strawberry plants in August, and the next season they produced a moderate crop; but such instances arc exceptional, and not common. FARM IMPLEMENTS. Keep constantly in the tool house a dry cloth and an oiled one. When a tool U brought in, a3 it always is when the day s work is done, it is cleaned and wiped with the dry cloth If it is not to be used the next day. the oiled cloth is then rubbed over it Whenever a plough or cultivator is not to be used the following day, it is brought ia and cleaned. By pursuing this course through the summer, every implement is kept bright and ready for use. In addition to this hoes, shovels, spades, etc., are kept 6uarp All this tima uso lard oil, but when there is no further use for ploughs or cultivators, give them a gcod coat of linseed oil. This forms a covering that is impervious to moisture, and the tool is as . bright in the spring a3 when laid away in the tail. - P RESERVING EQG3. At a lata meeting of the W estern New York Farmers Club, Mr. Quinby gave hi3 method or preserving eggs. His practice is to gather the eggs from, the nests, and when two or three dozen are obtained, to place them in a dish and pour scalding water over them, and immediately tarn it off. This process i3 repeated three times, by which means tho albumen is fixed or coagulated, the pores of tho shells closed, and the egg, as it were, canned in its own covering. Thus prepared the eggs are ready to bo packed away in the cask designed to hold them for future use. Spread a layer of salt over the bottom of the cask or crocks, sufficient to steady the eggs, and then set them in a circle, apex downward, till the surface is covered with egfrs. Add more salt, and proceed as before till the cask is filled the top layer being covered with salt for the exclusion of the air. Put down in this way eggs will keep, as fresh as when first laid, for a long time. They have been found as fresh at the end of the year as when first laid, with no pjrceptible chacga in their favor. putting rp apples for market. A correspondent in a recent num. ber inquires as to the best mode for putting up apples for the market. Greene County, .New York, produces large quantities of apples, and tho best cultivators proceed as follows: In picking, uso half bushel baskets, with hooks to bang them to the rounds of the ladders, and ropes to lat them down. Empty carefully into barrels; toward evening carry the full barrels carefully to the barn or building for their reception; pour carefully from tho barrels into bins about thirty inches high. Let them remain until sweated; sort over and put various qualities by themselves into good barrels ready for market. Wet weather is unfavorable for putting up apples, as they will be damp and not in good condition to be closoy packed. We have some economical farmers, who save six cents on each barrel ia buying inferior ones, and lose fifty cents each in selling, on account of the shabby appearance of the barrels. We have also some smart farmers IO D ixiai lr i Ui LU VIC, who put good apples in each end of the barrels and bad ones in the middle, but buyers are as smart as they, and it does not pay. Cultival r. From Hearth and Home TO MAKE AND PACK BUTTER FOR WINTER USE. First of all, the milk mu3t ba skimmed at the right.time. The beat but-tsr-maker3 do not wait until the miik has clabbered, but skim it when it is the lea3t bit sour to tho taste, which can be easily ascertained. When milk sours before it is skimmed the cream appears thicker, but in rodity it is not. Sannet tried the experiment with two equal quantities of milk. The.one that was skimmed be--fore souricg that is, in thirty hours -made thirty pounds of butter; the othr, allowed to stand sixty hours, yielded twenty 82 ven pounds. When a milk room has an even temperature, say sixteen degrees, all the cream that is desirable lor butter will rise in from thirty to thirty-six hours. It never should stand an hour longer. The cream after this period is deprived of the delicious flavor and aroma essential to the taste of good butter. Of one thing we are certain, from experiments, the sooner the cream can be made to rise the better is its keep jDg qualities. All travelers inform ua that in London and Paris the butter lar exceeds ours. One of the chief points with the dairy women is to skim - the milk at the right time. Tho most celebrated butter in the New York market is from Orange County, and they adhere 6trictly to the thirty-six hour rule. Croam must be sour to mako butter; this is a fixed fact in our mind. In the winter, when the cream foams and bubbles in ie churn, and refuses to coma to butir, it i3 because it has not experienced a change. The weather has been too cold to allow of it, and we add a tablespoonful of powdered alum to produce the desired results. The cream which boiled and r8gcd like a mad creature i3 subdued, and in a few moments the welcome splash announces the butter. This summer has been cold, damp and mouldy in its tendency. Cream ia easily affected by the atmosphere, (ur dairy consists of one lovely Aldertey, Juno by name. Sweet as June roses is her milk, golden as its butter-cups her cream. But it must stand a wsek before enough is col--ted to churn. ed by connoiscurs delicious. Wo beg our readers who are preparing butter for Winter us3 to put saltpetre in the j cream ss it collects. We make all our table butler from this one j
cow: its flavor and color are un- j by Philadelphia butter, ; add no coloring mat- j surpassed and wo ter now, while we know taat the far-famed 4-Continental",butter is colored with annotto. In winter we color with orange carrots, grated, or with yolks of eggs, preferring tho latter. The churns of the present day sr3 a great aid in working out tae buttermilk; still, butter paddles are needed, few women havicg hands or wrists strong enough to refuse their aid Wo think that butter paddles miiJ.i be manufactured like a large fork, or in imitation of four fingers and a thumb, which would greatly hasten the flow of the buttermilk. Can not some Yankee youth benefit our suggestion? When the butter is waxen in texture, as all . AlderDey butter is after a little mold ing, and . it ceases to color the water which drip3 from the ice (we never wash butter; the sugar of milk 11 iii . . 13 soiudic, aau ine water tases away the sweetness of the butter that is our experience), then work it into cakes, which are placed in a stone jar containing a brine made thus: To one gallon of water add three quarts of fane salt, ono pound of saltpetre; one pound of white sugar. Boil and skim well, strain through a cloth, and, when cold, turn upon the butter. This brine has kept butter for us the year round. "We are now using butter for cooking purposes made last September, put down in a firkin, with a tablespoonful of powdered and sifted saltpetre, and of sugar to every four pounds, and it is better than much of the butter which will be marketed this year. It has no odor or ta3te which would indicate its age. It has been kept in an ice house since June, entirely covered with brine We consider butter made" in Sep tember and October much more de sirable for table use in Winter than that maae in June, me reason is obvious; it has cot had to enduie the Summer's heat.
