There is something friendly about the making of toast. In the space of a few minutes the rosy glow of the toaster or the quick heat of the oven transforms the fresh golden crispness of good toast. And toast is a versatile food, for its fragrance and flavor add pleasure to any course in any meal. Grood toast may be made by a variety of methods: electric toaster, oven, broiler, top burner toaster, over glowing coals. Any. of these methods will produce the kind of toast that is best liked: crisp throughout, crisp on the surface and soft inside, light brown, medium brown, dark brown. The quality of the toast depends chiefly on the amount of heat that is applied, and the length of time the bread is exposed to the heat. Melba toast, crisp and golden, is most easily made in a slow oven. Just plain toast may be varied any. number of ways. Cinnamon toast is delightful for breakfast, as are also honey butter toast or fruited toast. Savory toast is delicious with vegetable or seafood salads. Hot milk toast makes a perfect Sunday evening supper for the family, or a cold weather lunch. Hteiich toasted cheese sandwiches served with apple or other fruit salad satisfy the coldweath'er wish- for something warm to serve with salad. And for one of the quickest one-dish meals ever ‘invented,- toast rings on creamed salmon and peas ought to take a prize. Toast Rings With Creamed Salmon And Peas 3 tablespoons butter 3 tablespoons flour 1-2 teaspoon salt 1-4 teaspoon pepper . 1 1-2 cups milk 1 cup canned salmon, flaked 1 cup cooked peas 6 slices of -bread Grafted cheese

Melt, butter, add flour, salt and pepper, stirring until smoothly blended. Add milk and cook over low heat, stirring until slightly thickened. Add the salmon and the peas. Butter a baking dish and pour the creamed mixture into it. Cut the bread with a doughnut cutter and toast. Place the toast rings on top of the salmon and peas. Sprinkle with grated cheese. Place in a moderate oven (375 degrees F.) until the cheese is melted. French Toasted Sandwiches Make sandwiches in the usual way. Cheese, ■* peanut butter, jam sandwich spreads, deviled ham, make especially good filings for this type of sandwich. Dip each sandwich into a milk and egg mixture made by beating 1 egg, and adding to it 1-4 teaspoon salt and 1 cup milk. Fry sandwiches in butter until the bread has become golden brown. Serve hot, accompanied by fruit, jelly or

jam.

Banana French Toast

2 eggs

1-2 cup maShed banana

1-2 cup milk

1-4 Teaspoon salt

6 slices bread

Beat eggs slightly, add mashed banana, salt and mhk. Dip bread into batter. Brown on both sides on a hot, lightly greased griddle or table stove. Sprinkle lightly with powdered sugar. Serve hot.

Autos Take Heavy Toll ST. LOUIS, MO., Numerous persons were injured in automobile accidents during the holidays. Frank Wilson, 50, 4331 Aldine Ave., was shaken up and bruised in a collision at Cardinal and Lucas avenue Sunday about 2:30 a. m. Bernard Isenberg, 32, (white) 4646 Tennessee avenue, driver of the other car, was seriously injured. Both machines were badly damaged. * • • O. Hall, 37, 305 N. Ewing avenue, was seriously injured at 20th and Market street Sunday about 6:25 a.m. when hit by an auto driven by Robert Martin, 26, 2333 Clark avenue. * * * Four persons in a car driven by Dr. James Breedlove, 55, 4011a Cook avenue, were shaken up and bruised Sunday about 3:10 p. m. when his Buiek sedan was struck by a Chevrolet sedan driven by Evangelos Gritzas, 43, 2107 S.
