Pilaff.—This is the great diBh of-the Orientals, and it is so truly deliciouB and bo cheaply and easily made, that it a wonder it has not become, ere this, a com* mon dish in other countries. It is prepared in the following manner: Boil sufficient rice (accordihing to the number of mouths to feed) in a large quantity of water. It should be put in cold water, with a little salt, and not stirred while cooking. When thoroughly done strain off the water through a colander or sieve, and each kernel will be separate and solid then season with salt, pepper, butter, and a little tomato sauce cut up (not very fine) roasted or boiled mutton, or veal and mix with the rice in the portion of about two-thirds to one*third meat let them simmer together a.few minutes, and serve hot with the meafgravy. The water that the rice has been boiled in makes the very beit starch for fine work.

Colleges should not-be for all men or for all women, but -the, same buildings and the same .professors should be provided for both in common. And as it is in everything else Eo it sbould be in amusements. There is much greater liability to temptation and immorality where amusement is sought in the insolation or separation of tho sexes.
