Practical Keclpn*. Rologna Sausage. —Ten pounds of fresh beCf, ground or chopped fine, two pounds of fat pork, cut in small pieces, one and one-quarter ounces of mace and one and one-quarter ounces of cloves, powdered fine; one and one-quarter ounces of black pepper; mix well together and let it lay over night. Stuff in bags; let them lav in ham pickle four or five days, then hang them up to dry. Raised Cake.— Two cups dough, one egg, three-quarter shortening, half lard and half butter, one and ouo-quarter cups of sugar, one-third cup milk, two tablospoons flour, two teaspoons Royal baking powder, one cup raisins; put baking powder into flour, put this on the raisins tho last thing. Put Into tho oven as soon as made. Lemon Jelly Cake.— One cup sugar, one cup milk, ono quarter cup butter, one egg, two teaspoohs Royal baking powder, ono and one-half cups flour; bako In throe layers. For the Jolly take one cup sugar, mix with one heaping tablespoonful flour, one egg, ono cup water, Juice and peel of one lemon. Cook until thick, stirring all tho time. Let all get cold then put together. Potato Yeast— Take eight or ton medium sizod potatoes, boll and strain through a colander, add about one gallon of water to them, then boil a small pinch of hops and pour Into the potatoes through tho colander; and one cup* of fine salt, and cup of sugar. When cool enough add one cent’s worth of yeast and put in a stone jug and sot in a* warm place without the stopper. A* soon as it begins to sink cork up and set in a cool placo, ready for use. Soft Molasses Gingerbread.—Onecup of molasses, ono tcaspoonful of soda* two teaspoqnfuls of ginger, one tablespoonful of butter or lard, a pinch of salt If you use lard. Stir together thelard, soda, ginger and salt, then add themolasses and one pint of silted flour.. Then pour In ono-lialf a cup of boiling: water. Bake.about one inch deep in a sheet. Tills is very nice if the water is boiling and the cake well beaten [as it is added.
