Sugar or Salt.
Experiments made for the French Minister of Agriculture indicate that sugar is a better preservative of meat than salt. It is more expensive, but the powdered sugar forms a coating retaining the juices of the meat without loss, while the nutritive qualifies of the meat are considerably lessened by the salt.
