A vital principle in cooking eggs is, that they should be cooked gently. To test an egg, place in bowl of cold water; if fresh, it will go at once to the bottom and rest on its side; if a little stale it will go end downward, then fall over; it very stale, will stand on end. Eggs are most digestible, when most palatable. The less yon beat the eggs for scrambling the finer tlie flavor. The dishes prepared were of the finest order. For an orange omelet, Ik;*1 separately the whites and yolks of two eggs. To the yolks add two teascpoonful 8 ol orange juice, one half teaspoonful orange extract, and one of pulverized sugar. After cooking for two or three mitnites, place into a moderately, hot oven and bake for about tec minutes. Fold gently and sprinkle with powdered sugar. Serve while hot.
