The Capon hag ever been esteemed one of the greatest delicacies, preserving the flavor and tenderness of the chicken, with the juicy maturity of age, the flesh yiel-1 ding a rich and good chyle, and without! any tendency to inflammation. The flesh of the Turkey is somewhat more dense of fibre, and more alkales. cent and substantial than that of the chicken, but it is reckoned nourishing and restorative. Guinea Fowls are not so white of flesh as common fowls, but more inclined io ! the pheasant color; in quality, short and savory, like the flesh of the pheasant, and ■ easy of digestion. In fact, the guinea fowl is reconed by many a good substitute for the pheasant or prairie-hen.— Th«y are prolific, and their eggs nourish ing and good. The flesh of the Duck is of a savory and somewhat stimulant nature, and is said to afford a preferable nourishment to that of the goose, being not so gross, and moie easily digested; and that of the wild particularly the canvass-back, is reckoned still more easy of digestion than the tame, although more savory. The whole of the Goose tribe of which there is a great variety, are held to afford a food, stimulant, of a strong flavor vis-1 ecus quality, and of a prutrescent tendency. The flesh of the tame Goose is more tender than that of the wild, but generally it is a diet best adapted to good stomachs, and powerful digestion, snd should be sparingly used by the sedetita ry and weak, or by persons subject to cutaneous diseases.— C. N, C, in Culti vjtor. Cheap Vinegar. Good vinegar is not only a luxury, but an absolute necessity in every family, and is as cheaply and easily manufactured in the household as any other article of diet, yet many families never have a supply of their own, but depend on buying at the grocer's and borrowing of their more fortunate neiglbors. By a simple pro cess, with little or no expense, a supply for family use can be made with fat less trouble than is required to buy, or bor row what is needed. The process is thiaSave all your apple parings, and slice in with them all waste apples Bn d other fruits; keep them in a cool place till you get a pailful, then turn a large plate over them, on which a light weight should be placed, and pour on boiling water till it comes to the top. After they have stood two or three days pour off the liquid, which will be as good cider as mnch that is offered for sale; strain and pour it into a cask or some other convenient vessel, (anything that can be closely covered will do.) and drop in a piece of “mother,’. or vinegar plant, procured of some one that has good vinegar. If set in a warm place, the vinegar will be fit for use in three or four weeks, when it can be drawn off lor use, and the cask filled with the cider made from lime to time by this process. My “good housewife” has, by this method, made during the fall of the year when apples and other fruits were being dried, a barrel of excellent vinegar, which cost nothing but the trouble of preparing, i The parings should be pressed pretty compactly into the tub or pad, and onlywater enough poured over to come to their suiface, otherwise the cidor would be so weak as to require the addition ot molasses. By having two casks, one to contain the vinegar already made, and the other to fill into from time to time one need never be without good vinegar The rinsings of preserve kettles, sweet meat jars, and from honey, also stale beer and old cider should all be saved for the vinegar cask: rnly caution should be used I that there be sufficient sweetness or body io whatever is poured in, or the vinegar! may die from lack of strength.
