Woman In Thailand Is Leading Caterer !, By GAY PAULEY ‘ BANGKOK. Thailand (UPI) — I Every nation has its feminine j success story. Here in the capital i city of Thailand, one is represent- ! ed by Mom Luang Terb Xoomsai, i whose culinary skill has led to a career as caterer and baking industry executive. Miss Xoomsai believes she is Bangkok’s only private caterer—although she said “all the hotels have catering services, of course.” We met her at a cooking demonstration for 12 U.S. and western European newspaperwoman on a tour of the Far East. Later, we sampled her cooking at a Thai banquet, served buffet and ranging from rice and currey, Thai food staples, to one of her specialties— < “woven” omelet. The cooking expert, a plump brunette divorcee with a son of 13, said she came from a family of cooks—both her mother and i grandmother trained themselves, in making both native and European dishes. She is the first of the family, however, to make cooking a career. Twice a week she demonstrates cooking oh l Bangkok television. It was during World War 111 when Thailand’s supply of wheat flour ran low that she began the development of bread from rice flour. Friends at her home sampled and urged her to make the bread available locally. Today, her bakery produces 5,000 loaves of bread each day—a small output by some U.S. production Standards. But she explained, “I don’t want the baking business too big. I prefer catering.” The night before, she had catered a buffet dinner for 700 persons. Foreign embassies are among her larger customers, she said. There are also more than 100 private homes who have her cater dinner—in some instances lunch and dinner—because the woman of the house holds an out/ 1 side job and doesn’t want to bothered with cooking. A staff of 15, including twin sisters she has trained as “my right arms,” handles the catering. Extras are hired for the larger parties.
