One is a simple question of logistics: How many persons will a barbecued hippopotamus serve? Most cookbooks are rather vague on that point. But it is something that aifyone planning a hippopotamus cook-out needs to know. A host would feel Setty silly telling his guests that had run out of hippopotamus. Another problem comes in figuring out what to serve with it. What vegetables complement a hippo? What wines are appropriate? Until this week, there was very little information available on this subject. At least in this country. There was, of course, considerable data available in Africa, where a favorite dish is hippopotamus smothered with missionaries. Gustatory Gap Ciased Fortunately, this gap in our gustatory intelligence has now been closed, thanks io the courage and cunning of Gordon Leech, genial manager of the National Zoo Restaurant. Each fall, Leech prepares a series of lunches for the Anteaters Association, a group of wild game fanciersr This year, the piece de resistance is barbecued hippopotamus. I joined the Anteaters at thenfirst lunch of the season and I must say it was quite an adventure. But before dining, I cornered Leech to find out what the experience had taught him about

barbecueing hippopotami. "We bought this one from a wild animal dealer who happened to have a spare hippo on his hands,” Leech said. “Having a spare hippo is not like having a spare' hamster or something like that. The dealer was easily persuaded to part with it Slaughtered In Chicago “We had It slaughtered in Chicago and shipped here in a refrigerated truck. I don’t know what it weighed on the hoof, but it dressed out at about 3,800 pounds. “We expect to serve more than 900 people and still have plenty left over for hippo soup, pate-de-hippo and hipoburgers.” As accessories, Leech is serving wild rice, “potatoes Mombasa” and “carrots Nairobi.” From the wine list he recommends lancers crackling rose, which comes from Portugal and is served chilled in a ceramic crock. Having satisfied my curiosity, I pulled up a chair and joined the feast. The taste of barbecued hippopotamus is rather difficult to describe. Its texture is something like barbecued beef that has been obtained from a bull that had been chasing too many cows. After dining, I went by the mammal house at the zoo to refresh my memory as to what a live hippopotamus looks like. 1 shouldn’t have done it.
