Some Are Allergic To Coflee Beans By DELOS SMITH UPI Science Editor NEW YORK (UPU— The fact that the green coffee bean is highly allergic to some people will not seem important. Relatively few persons come into contact with it, and the roasted bean which provides a beverage for many millions causes few allergy troubles. But the fact has suddenly acquired scientific importance. For 1 the first time the substance in green coffee bean which causes the allergic reaction has been identified, more or less positively. The substance is chlorogenic acid. And don’t say, “So what!” Chlorogenic acid also is a constituent of apples, pears, carrots, beans, celery, lettuce, cucumbers, cabbages, plums, cherries, sweet potatoes and tobacco. Furthermore its particular class of compounds is even more widespread in the vegetable kingdom. Touchstone tor Progress The identification of chlorogenic acid as the culprit in green coffee bean allergy thus could be the touchstone for new progress in the identification of a whole host of allergy - rousing materials contained in foods, pollens, dusts and moulds. The identification was made by Dr. S. O. Freedman and his associates, J. Krupey and A. H. Sehon of McGill University, Montreal. Before coffee is roasted, the chaff is removed from the raw beans mechanically and a fine dust fills the chaffing room. Workers who are allergic develop asthma, runny noses and skin eruptions. Extracts made of this powder will cause allergic reactions when tiny amounts are put into the skins of susceptible people, just as extracts made of house dusts, animal danders and many other substances will. But extracts can contain any number of chemical compounds. Immunizing the allergic would be ever so much simpler if you knew which ones offended. The McGill scientists broke their green coffee dust extract down into fractions, some allergic and some not. These fractions were

broken down in turn to related compounds which had become suspect because the allergic fractions were rich in them. Produces Positive Reaction These compounds were put into the skins of 10 coffee workers who were allergic to green coffee. Only chlorogenic acid produced positive reactions, and an extremely tiny amount of it was enough to produce a large woal and the “flare’, response in all 10. Chlorogenic acid was first identified in 1908. It is a compound of guinic acTd and caffeic acid and evidently is chemically changed by the coffee roasting process because extracts of roasted coffee produce only weak reactions or no react oiant all in persons allergic to green coffee. The scientists are now engaged in searching its molecule for the allergy-causing combinations of atoms. Meanwhile, they reported their progress for the benefit of other chemists engaged in similar work. Hoosier Farm Prices Continuing To Rise Continuing their upward trend, I Indiana farm prices increased one per cent from mid-August to midSeptember, according to Purdue University agricultural economists and state-federal statisticians. The mid-July to mid-August increase was three per cent. The Indiana farm price rise equalled that of U.S. farmers — one per cent. However, purchasing power of Indiana farmers rose one per cent, while U.S. farm purchasing power remained unchanged during the period. Generally, Hoosier livestock product prices increased, but grain prices dropped. The Indiana livestock price index climbed two per cent as the grain price index fell five per cent. Major commodity prices increasing: Hogs, calves and oats, two per cent; whole milk and wool, five per cent, and eggs and hay, three per cent. Commodity prices declining: Cattle, one per cent; corn, three per cent; turkeys, -sevep per cent;, soybeans aind potatoes, 10 per cent; apples. 11 per cent; chickens. 15 per cent, and broilers, 16 per cent.
