Chemicals In Food U wm probably more Lhaa 7«MM jeer. nft> when mow Aral added a chemical to food. Thia. <rf eouree, waa •odium chloride, more commonly known aa table eaH. If people rot •Mi. ar died, after mdai feeds pnaorvod with ear* tala rhemieak, the chemieab wore abandoned. In the 1800 a. many <b ea, oome pobotooua, ware used to conceal the inferiority at different fooda. It was Joni 50 yearn are that Dr. Harvey Wiley queetlowed the aafety of cheeakahi awed in food. He fowfht for a fore food and druf act. largely to prevent the fit of berk acid, formaldehyde, and salicylic acid la foods. He dramatized the problem by forming a “poison squad.’’ Young men volunteered to eat foods containing measured amounts of the questioned chemicals, and they were then observed for detectable evidence of harm. The whole problem of food additives has advanced in the past 50 years. The addition of potassium iodide to salt helps prevent common goiter. Vitamin-enriched bread, corn meal, and breakfast foods, as well as oleo and other foods, had greatly increased the healthiness of Americans. Where scurvy, rickets, and other deficiency diseases were once common, they are now almost extinct. la the mid-1950’s a new problem arose. Several ' hundred new additives had not been completely pretested for human safety. Under the law then in effect, the food and drug administration could not stop their use. The law was amended, and now additives which might produce harmful long - term effects from exposure to minute amounts can be prohibited until proved safe. * The law also prohibits the use of any chemical that would result in consumer deception. Extensive tests must be run before the additives are marketed. Results must be submitted to the U.S. FDA. If the FDA is satisfied that the chemical is safe, it may be used. A maximum limit on the amount, usually the smallest amount effective, will be fixed in the order permitting its use. In addition, this applies not only to substances added directly to foods, but to those used in packing, or that in any way might contaminate the food. It applies to irradiation methods, and residues that might carry over into animal foods, like meat, milk or eggs. Continued investigation of chemicals and foods consumed by the American public in this day of mass-mar-keted goods is a real necessity. We must remember that everything we eat, from meat to carrots, has always been just a great mixture of chemical compounds and elements. Adding new ones can be beneficial or deleterious, depending on what is added. Thus the Food and Drug Administration (FDA) helps protect the American .• public. — ~ ,
