Eads, foods and f nutrition specialist, who tells f about the carving, did not indicate { there have been any 1957 amendt ments to the old rules. So if you { know somebody that had good l luck roasting and carving last year ’ perhaps you will want to ask their f advice. J However, for those unlucky f enough not to have an invita- ' tion out Nov. 28 the Purdue advice t may fall on receptive ears. Stuff In Stuffing f Unless you have an electric oven ( which cooks food almost before f you pop it in, the advice is to use r low heat and slow cooking. J Sprinkle the inside of the turkey' f with salt and fill the body cavity f with stuffing. (If there is no body cavity, perhaps you’d better have { someone dress the turkey first ! to assure that there IS one). t Rub the outside with butter or

Don’t sear or. add water. It the pan Is not cov-j 1 ered, put turkey on its left side ' and later on its right side and ' breast up, alternating throughout ' the cooking period. (You may start with the turkey on its RIGHT side if ydu wish, just so you don’t for- ; get to turn it to the LEFT later on). Don’t Throw In Towel < The turning process will keep you occupied, for you should 1 change the turkey’s position every 1 30 minutes to 2 hours, depending on how big it is (Be glad, if it's an unusually big bird that you don't have to wrestle with it every half-hour). Lift the turkey with folded towels, then you won’t bum your hands. Baste with melted butter or pan drippings eash time you turn it. If the oven temperature is low, cook the turkey about one-half hour for each pound. This will mean early rising, if the bird is large. (Miss Eads didn't say, but simple mathematics would indicate a 24-pound turkey served at noon on Thanksgiving should start cooking at midnight Wednesday. No wonder wives and mothers are exhausted when Thanksgiving 1 s over!) There are other processes, such as making gravy and getting the rest of the meal, but maybe your mother or a neighbor can tell you . how to do these. They will probably be pleased you asked their advice, anyhow. Has Two Drumsticks Now for carving. Best bet is to

let the man of the house do this. If he balks, just dump it in his lap. ’ ’.r Remove the leg first, Purdue says in nn illustrated brochure listing six steps In carving. (The brochure tells about removing only one leg, but since most healthy turkeys have two drumsticks it would be wise to remove both as the procedure is the same.) Then slice the drumstick meat and the thigh meat in order. White meat, first to be grabbed est the platter, is last in the carving. Cut deep into the breast parallel to the wing and continue carving thin slices until there is enough for first servings <lf anyone asks for seconds, you’ll have to carve some more). This sounds compucated but it isn’t so bad once you do it. A simpler Thanksgiving meal, however, would be bacon and eggs which can be dumped into a hot skillet while you’re still in pajamas. The only drawback, however, is that we seldom associate bacon with Thanksgiving. Brotherly Ticket MEDFORD. Ore. — (IP) — Policeman George L.
