Dark Green and Graceful Dark green and graceful in shape, fresh spinach is a colorful addition to any tossed salad. It s also delicious when served wilted with a sweet-sour dressing. Wilted Spinach 6 caps cleaned and stemmed fresh spinach Salt and pepper -1 tablespoon sugar 2 green oniony chopped 6 slices bacon 6 tablespoons vinegar 3 tablespoons water 2 hard-cooked eggs, chopped x" stop -rossiM<rSS* <i'M~VVILTED Place spinach in hot bowl, tearing any leaves that are very large. Add salt, pepper, sugar and onions. Fry bacon until crisp; drain and crumble. Add vinegar and water to drippings; heat and pour over spinach. Toss until wilted. Sprinkle chopped eggs and crumbled bacon top and serve immediately. Yield: Six servings. If you prefer, white Or yellow onions may be substituted for the green onions and the hard-cooked eggs may be omitted. Bits About Buying When you buy spinach, look for large fresh leaves that have a dark green color.
