The only thing to worry about is yellow and withered leaves. They indicate old cauliflower. — — BRIGHT GREEN YELLOW, WITHERED LEAVE 1 ?-FRESH LEAVES OLD Use only the fresh white cauliflower to make these pickles. Crisp Cauliflower Pickle 2 large heads (5 1/2 pounds) cauliflower 12 (1 pound medium) onions 2 tablespoons salt 3/4 cup mgta 1 teaspoon ground turmeric 2 teaspoons whole mustard seed 1 teaspoon whole celery seed 1 small dried whole red pepper 1/2 teaspoon whole cloves 1 1/2 cups white vinegar 1 1/2 cups water Boiling water Remove leaves from cauliflower. Combine sugar, turmeric, mustard seed, celery seed and red pepper in eight-quart preserving* kettle. Tie - clo * es Stir in vinegar and one and one-half cups water. Boil five minutes. Add cauliflower. Boil five to ten minutes (just until crisp-tender). Pack, hot, into hot sterilized , U u„ jars. Fill jars boiling pickling liquid n and enough boilFiSf * n g was er * ° cover.
