L, H, BinierJ, an agricultural 1 economist at the University of IV i linols, cited among the several reasons tho sixeagle increase in hog production, the declining consumer preference for pork despite government' programs to eucourage greater consumption, and the increased marketing margins. Simerl pointed out that In wake of higher hog production, retail prices were reduced in order to sell the stepped-up output. Pork, which averaged 58 cents a pound at retail in 1153 and 1954, was down to an average of 43 cents last December. Another factor has been the widening of market margins. The average marketing margin, which was 18 and one-halt cents a pqund for pork in 1953 and 1664, Increased to 26 cents in the last quarter of 1955. Marketing margins normally increase a little when supplies are large, says Simerl. In recent years, however, rising costs for la- > bor- have added to the marketing i margin. Tbe agriculture department tays that labor costs for marketing a ton of food increased about three percent a year since 1951. Simerl says that very Ijttle of this increase can be attributed to more or better marketing services. Sttti another factor which has helped keep hog prices down has been the heavy production of beef, veal, eggs, poultry, and cheese — all high-protein foods. Beef and veal production increased 61 percent from 1951 to 1955 and this year’s output is another 10 percent higher than in early 1955. - X . Consumers are eating less pork today than ever before—still an- , other factor for the depressed price for hogs. In 1947 Americans spent more of their food dollar for j pork than they did for beef.
