'Cooks' Comer' [ By Mary R. Thaman STRAWBERRIES POPULAR JUNE FRUIT June is the month for fresh Strawbeiry desserts. Whether it’s strawberry shortcake, strawberry pie or just plain strawberries with cream, you’ll please your family if you serve this rosy-red, delectable fruit often. Modern freezing methods make it possible to serve strawberries throughout the year. The following method for freezing strawberries is recommended by the U.S.D.A. Cap and sprt berries, wash and drain well. Leave berries whole or slice. This depends on your preference. Pack; in 1 part by weight of sugar to 3 or 4 parts by weight of fruit (1 ciip sugar to 5 to 8 cups fruit). Be sure,to mix thoroughly until all is dissolved and sufficient sirup is formed to cover fruit when packed. If necessary press fruit down in package until sirup covers fruit. Leave *,*_» inch head space in cartpn or bag. In glass jars or tin cans leave ibi inches head space.

Here’S the t recipe: French Strawberry Pie ; 1 pint strawberries ' 1 %. cup sugar ' 1 tablespoon unfavored- gelatin , l 4 cup cold water 1 | bi cup hot water 1 tablespoon lemon juice bi teaspoon salt A'S cup, heavy cream, whipped 2 stiffly beaten egg whites 1 9-inch baked pie shell f 1 package bream cheese 2 tablespoons cream Crush strawberries; cover With sugar; let stand for 30 minutes. Soften gelatin in cold water; dissolve in hot water. Cool. All strawberry piixturp, lemon juice an<| salt.\ Chill Until partially set; fold in cream and egg whites. Flies are not only dirty and contaminate foods but they are also the common Carrier of a number of human ailments, such as dysentery, summer colic and diarrhea. In addition, the germs of many other serious diseases, in-, eluding tuberculosis, typhoid fever and poliomyelitis, have been found upon the|r bodies. Sanitation First Line' of Defense The ude of insecticides alone can not be expected to rid a premise of flies. Sanitary practices to eliminate their breeding places must be followed since flies can breed, in decaying organic matter more rapidly than chemicals can kill them. A “must” of fly control is the regular removal of manure, garbage and all other decaying plant and animal matter. If barns and outbuildings aife sprayed \to control f|ies, the problem of con-, trol arouhd the home will be much easier. The proper disposal of waste foods and dishwqtei\ is highly 'important sinc£ these materials, readily, attract flies. Homes should be kept screened during the summer months. For several years, DDT has been successfully used; for fly control; However, in some localities, houseflies at;e becoming more resistant, to it and therefore DDT is losing' favor as a fly control chemical. Two other new organic insecticides will give gbod control of DDT resistant ilies. Theste are chlordane and lindane. Both of these materials are on the market in the form of Wettable powders, emulsion concentrates and oil so" lutions. ' | Chemical control —Use 5 percent lindane in oil splution.
