Homemaking Tips by Anna K. Williams Home Demonstration Agent Do you remember the wonderful raspberry and blackberrji jams yorir grandihother used to make? They were) so flavorful because grandma used fresh, home grown berries. You, too, can have the same delicious jams if you! raise and pick berries fresh , from the garden. Large, fleshy berries not difficult to raise if you keep the following things -in mind: plant vigorous, tjisease resistant varieties; fjirnish the plants with plenty of organic matter an<| plant j‘ food: and select a well dirainedj soil for ybur plants to encourage! ■ a deep root system. Home Rendered.. Lard ~ I Homemakers who use homerendered lard iti their cooking are bothered by? two questions. How' p4n the lard be* prevented from becoming strong; and is it all right td use it for cqojking after it turns strong or randid? , Lard is a high-energy food which is almost completely digestible and Contains substances of good nutrition. After it becomes rancid however, it is Undesirable for food purposes. In addition to being unpilatable certain desirable food values have been destroyed. Rancid lard used in s cooking destroys essential vitamins in foods to which it is, added. The keeping quality of lard can l-e improved by adding two to tlirbe pounds of hydrogenated vegetable shortening to 50 pounds j of lard at the time it is rendered ; The preferred method is to add j the vegetable shortening to the! rendered lard in the kettle before j Settling and separating the crack-! lipgs in the lard press. However, the shortening may be added to the melted lard in the storage container. If this is done. Ke careful to stir until the vegetable shortening is, entirely melted so that ft is thoroughly mixed with the lard. When you fill the container, be sure to allow for the additional volume of shortening to be added. ?■ ■' i \ Ji! .I■

For good keeping quality of home rendered lard, the fat tissues should be rendered aS soon as possible after chilling, preferably within 24 hours. Iron kettles which are rusty should nevey be \used for rendering lard. It is easier to start with a small quantitl of fat start with a small quantity of fat begins to melt, the remainder may be added. . < : n ; ~ : - j : -
