'Cooks' Corner' BY MARY R. SMITH The Versatile Bean The soybean is more than 5.000 years old but. to the United Stales it is a relatively new rood discovery. About forty-five years ago the soybean was introduced to this country as a forage crop. China had been the first home of the soybean Since that time — fortyfive years ago. the soybean has become one of the most important providers of vegetable oil for edible purposes. Soybean oil meal, rich in protein and other food nutrients, is a valuable constituent of stock and poultry feeds. The soybean is being used in Increasing number of foods for the American table and. in addition, industry is find ing hundreds of uses for it. The oil extracted from the sqfbean is used in numerous food products including shortening, salads, oils, sauces. and lecithin. Industry finds uses for soybean oil in the manufacture of paint, var- * nish, soap, printing inks, lubricating oils, linoleum, waterproof goods, synthetic rubber, explosives, and core binders. Soybean meal, another by-pro- “ duct, goes into the manufacture of high grade livestock feeds and fertilizers. Soybean flour. g’lts, and flakes, all made from this “wonder bean." are utilized in bread, cookies, ice cream, diabetic foods, dehydrated soups, meat dishes pancakes and waffles, cakes, candies, breakfast - foods, and infant food. The soybean, like all legumes, is 'a rich, yet inexpensive source of complete, iMsly-buildlng proteins.
