It's so easy to carry in the big “dripping pan” that she bakes it in. Then with the icing baked right on the cake, it’s easy to make, to cut, and to eat In my file, however, that cake is listed as "Brown Sugar Spies Cake with Baked Icing”. But we agree with Mrs. Lowry that its • cake bom to go on picnics. Here is the recipe: BROWN SUGAR SPICK CAKE WITH BAKED ICING % eup shortening 1 tap. cloven 3 eups brown sugar 1 tap. cinnamon . whole eggs and 1 tap. soda 2 egg yolks 1 tap. baking powder cups sifted cake flour or H tap. salt 2Vi cups sifted all-purpuae flour 1 cup sour milk Topping 2 egg whiten h eup broken nut meats 1 cup brown sugar Cream the shortening, add sugar gradually, and cream thoroughly. Add the whole eggs to the egg yolks and beat well, then beat into creamed mixture. Sift the flour, apices, soda, baking powder and salt together. Add to creamed mixture alternately with the sour milk. Pour into a greased and floured baking pan ... rMi by 12*6 inches (2 inches deep). Make Icing Beat the two remaining egg whites until they will hold a point when the beater is pulled out Gradually add the brown sugar, beating the mixture well after each addition. Spread evenly over the eako batter. Sprinkle the nuts over this meringue. Bake the cake for 46 to 60 minutes in a moderate oven, 360* F. To Tel) When Cake Is Done You may think it will be rather difficult to know when this eake is done. But you can easily determine It by the good old method of thrusting a pick or straw into the center of the cake. If it comes out clean the cake is done. Te Make Half The Cake If the above recipe makes a larger eake than you want, you’ll find that you’ll have enough batt.-r to till an fl-inch square pan if you u..e only half the ingredients.
