Not Trick, When Yes Know The Tricks Unfortunately souffles have gained a reputation for being eueh trick, temperamental things that many women are afraid to attempt them. But like everything else, once you’ve learned the tricks, they lon't seem tricky any more. So here’s the recipe for Cheese Souffle with ail the tricks. CHEESE SOUFFLE 4 tbsp, better 1 cup mild American cheese 4 tbsp, low (grated) ra’o & ’ i LTerwm M tartar Melt the butter in a saucepan, blend in flour sndsaltremove from heat, and add milk. Return to heat, and cook until thick (about 5 minutes), stirring constantly. Now blond in the grated cheese •nd stir until the eheese is melted. Remove from the heat. Trick I—Do not everbeat the egg whites Beat them until they are frothy ... add the cream of tartar and continue beating until the rgg whites are stiff enough to hold up in a paint when you pull cwt the teeter. They must stay in that point If the point slumps back into the fluffy mass after a second or two you'll have to beet them a bit longer. But the, must not tone their gleoelneee If they reach the point where they are dull looking and inclined to fly apart, they are sverbeaten and will rain your souffle. There ia nothing for it then but to start all over again with new whites.
