Mother had been down to the eity and picked up a ■' new jdea for the refreshment* .. . something she<l seen at a swanky “ tea room. But »he wouldn't tell Jean what it was. Then came the b g moment when the girl* were all seated around the dining room table . . . the soft candle light shining on their exfwMtant fan s. Lizzie. the maid, brought the first plate from the kitchen • and set it down in front of Gladys Ashley, the president Jean could have sunk through the floor' THB GRAND SI RPRISE This grand surprise of her mother's was nothing but three tiny eream puffs with chocolate sauce over them. There certainly wasn't anything new or exeitmg ai«»ut that! Why, people had been serving cream puff* filled with custard or ice cream and covered with chocolate sauce for age* and age*! It seemed dreadful to Jean that her mother could let her down - like thi*. She'd trusted her to serve something different from any- . thing pise that had been served in Centerville. Jean plunged her fork into the nearest miniature eream puff and t saw pink peppermint lee erenm. But what was it th* girl next to her • was Laying . . . "What marvelous chocolate chip ice cream!” . . . and » som4ko- else was saying something about "burnt almond" . . . and th* • girls all seemed delighted. NOT THREE OF A KIND AFTER Al l. Then Jean saw that mother had surprised them after all. There was a different kind of we cream in each one of the three little puffs! *> Instead of ordering three pint* ... or quart* ... of just one kind of «• ice cream, mother had ordered a pint ... or quart ... of pink pepper- • mint, another of chocolate chip, and a third of burnt almond. Then “ she'd made the puffs and the chocolate sauce. The girl* were «imply . crazy over it. . . and »o a good time was had by all ... even Jean Here is the recipe for the «ma!l eream puffs that Jean's mother used: SM ALL t REAM Ft FFM Heat together to th* boilmg paint iti an enamel saucepan . . . 1 cup water — ‘-j cap butter Add all at one* ... 1 cup sifted all-purpose flour Stir constantly with a wooden spoon until the mixture clears the pan and form- a bail (about 1 minute). Remove from heat and cool. • Then add. one at a time . . . I unbeaten egg* Beat to a smooth paste after adding each <gg Beat until smooth % i and velvet*-. Drop from a spoon onto a very lightly greased baking . sheet . . . forming ball* about th* rise of marble*. Keep them 3 inch** w apart. • BAKE <s Bake 2fi minute*, keening the oven "hot'' .. . ISO F. ... for the » - first 10 minute*. Then reduce the heat to “moderate", 350 F., for th* | • last ten minute*. When baked allow to cool slowly, away from drafts. When thor- I ..uehly cool, eut off the top* with a sharp knife . . . scoop nut any ' | filaments of soft dough with a spoon. Fill with ice cream, custard, or I any desired filling. | - Thi* recipe make* J dozen tiny puff*. | £. TO HERVE WITH SALAD j These little puffs make a delightful salad accompaniment filled , I •"With I package* of soft white eream cheese blended with 1# chopped 1 ‘ pimiento-strfed olive*. to IF YOU WAMT A CISTARD FILLING .
