There are luncheons, teas, dmnerx and all sorts of parties given in their honor. Incidentally, it’s apple blossom time. too. So let’s build a luncheon 1 around these delicate pink blossoms that seem so appropriate for both the girl graduates and the brides. Pink is a lovely spring-time color, and one that can be carried ntrt very well in the food. Pink Fruit Corktail Topped with a Red Strawberry or Cherry Ram Timbales with Bechamel Sauee Green Beane er Broccoli Buchess Potatora Radishes Rolle Pick Im Individual Molds of Tomato Aspic tn Crisp lettuce Cups Freeh Strawberry lee Cream Sponge Cake or Angel Food Coffee PINK FRUIT COCKTAIL 1 rup pineapple, eut Into eubm Klo II “after dinner" mints 1 rup grapefruit, cut into cube* Strawberry or Kaapbcrry Juire 1 cup pear*, cwt into Cuban for coloring h cup cberriea or other red fruit Mix the fruits, mints and coloring together, and let stand until the mints are dissolved—about 30 minutes. Chill, garnish with cherries or strawberries and a sprig of mint Thb makes 8 servings. Cover the tops of the molds with a greased paper and bake 30 minutes (or until a silver knife thrust into th.- center of the timbales comes out smooth and clean). Use a moderate oven, 350’ F. for the entire baking period. You'll need 8 molds 2% inches in diameter and 2tx inches deep. BECHAMEL SAI'CB Melt 3 tbsp, butter in a saucepan over low heat. Remove from ' heat and slowly blend in 4 tbsp, flour. F» tsp. salt. tsp popper and '< t*P- paprika. Return to heat and add 1 cup of meat stock (etock can lie made by dissolving one bouillon cube in 1 cup of boiling water). ■ Hlend in *, cup cream and cook 10 minutes over direct h. at or 20 minutes in double boiler, stirring constantly to keep the mixture from lumping. Serve hot over ham timbales. You can make thia sauce ahead of time and keep it hot in the double . boiler, you know. DLCHESB POTATOES Mix together 3 cups of riced potatoes, 3 tbsp, butter and part of 3 beaten egg yolks reserving the rest of the yolks for brushing the top of the cake-. Add salt and pepper to taste. Shape by means of a pastry übe into roses, leaver, pvramids, etc. Brush over with th remaining beaten egg yolks to which 1 tsp. water has been added. Brown in a hot oven, 450’F. for 5 minutes.
