And I'm giving you a suggestion for some of the food, that might go well with iL 1.1 N< HEON OR NI PPER MEM' Egg Croquettes with Tomato Sauce Tray of Fresh Veg< table Relishes Broccoli or Spinach Hot pot ato Muffin, Plum Ja m Pink Khubaib Sauce Hermit* Coffee Ei.G CROQLBTTEN 4 tbsp, butter fl hard cooked egg*, chopped 5 tb,p. all-purpose flour cup Swiss cheese, diced •» t,p. salt > ' i cup roasted pvanu’.. chopped H tsp. celery «*lt Fine dry bread crumb* •s tsp. pepper 1 egg, slightly beaten N t,p. paprika 2 tbsp, water I cup milk | ■Melt butter in saucepan Blend in flour and seasoning,. Remove from heat. Add milk slowiy. stirring constantly. Return to heat and .ook until thickened, stirring constantly, to prevent lumping. Cook about 10 minutes over the direct heat or 20 minute, over hot watei to eliminate raw taste. Remove from heat. Blend in egg,, cheese, and ueanuts. Chill thoroughly. Shape into croquettes, the site of an egg. Holl in the bread crumb*. Dip each croquette in mixture of alightiy beaten egg and water. •Be careful to coat entire surface so croquettes will not break open.) Roll again in bread crumbs. Let dry about 's hour before frying. Place croquettes in deep fat frying basket, lower into hot fat, and fry until delicately browned. Remove basket and drain over kettle before placing croquettes on abiKirbent paper in a warm place to drain thoroughly. Nerve at once or keep hot in oven until lime to serve.
