Right now we're interested in these delicious, fruity little cakes for the children's school lunches not only because they pack so well -but because they keep so deitctoualy moist and fresh-tasting and ueM of all. because banana* as the name implies—go into these Frunana Cup Cakes PRt NANA CUP CAKHI N eup cooked prunes (cut-up> or •k cup sliced bananas <1 large 21* cups sifted cake flour bdnsnai t tap. baking powder it eup shortMißg tsp. soria | 1> eOps sugar % tsp. salt j 1 eggs H cup milk 2H rwp* sifted all-purpose flour ** tsp. lemon extract First of all let's get our fruit ready. Well dram our eook<-d i prunes very thoroughly and remove the pits. Then well cut them into small pieces. Now well measure these cut-up, well-drained, cooked prune- Slice the banana. Now we're ready for the mam business of making the cake. First ■ we'll cream the shortenimr It will cream mors easily If we leave It ' out in the room for half an hour or longer, to soften a bit. Wh-n I the shortening looks nice and fluffy we’ll begin creaming the sugar into I It When all is a beautiful, fluffy mass like whinpetf fream. we’ll beat I the eggs with a rotary beater, and then blend them into the creamed ' sugar and shortening Now we’ll sift together the flour (BIFTED RRF< RF rr WAR MEASURED), the baking powder, soda and -alt. i We’ll add this flour mixture to th<- creamed mixture alternately With I the milk into which we've blended the lemon extract. Add a little of this flour mixture first and last. Now we ll blend in the fruit. I’fllll INTO FANB AND BAKE Now pour the baiter into the paper cups—fitted into muffin pan« or into the well greased and floured muffin pans. Be sure that you du j not'flll thesr cup* more than li full. Bake in a preheated modera'ely ' hot nven F ) for 25 minutes. This will make 2 dosen medium-sixed cup cakes that is little cake* baked in cups measuring 2>« inches acrow Die top and inches de< p.
