Sometime*, she says., she adds lettuce to the sandwich, but she* per I feetly happy with ft “just plain". 1 Another friend uses up the raggle taggle end’ of turkey ir Turkes Salad Sandwiche*. These, too, make an excellent lunch or supper mam ditih with cranberry jelly and tea. coffee or chocolate. Here is the recipe: IH cup cold roust turkey cut in 2 olives, chopped small cube* ' H of » small red pepper, chopped H cup relery, cut m small enbe« H cup cooked salad dreasing Mix the chopped turkey, eelery. olives and red pepper together. Combine with the salad dressing and spread on slices of lightly buttered brewd If you want to add lettuce to these sandwiches, place crisp bits of lettuce on other slices of brewd, and place them over those spree* with the turkey mixture. This recipe will make from 10 to IE sandwiches Here’s an idea for some hot turkey sandwiches that are “diffirenf and very enjoyable for lunch or supper: Sauteed Turkey Sandwiches 1 run finely chopped turkey 2 tbsp, mayonnaise 2 hard-eooked eggs 12 slice* of bread (JJ-inch thick! 2 tbsp, chopped green pepper 1 egg 2 tbsp, chopped sour pickles H cup milk Mix the mewt, chopped eggs, green pepper and pickles together. Moisten with the mayonnaise. Spread this filling on S sites* of the briad. Lay remaining slicea on top of the filling. Beat the egg ami add the milk. Dip sandwiches in this mixture to eoat them on both side*. Saute on both sides in butter in a hot pan until golden brown. Serve hot .with cranberry jelly and erisp eelery. This make* • sandwtehc«. But for special, superlatively elegant hot tut key sandwiches try these Broiled Turkev and Cheene Sandwirhe* with Mushraom Sauce Make sandwiches of buttered toasted bread . . . with slices of well seasoned turkey or other left-over meat for the fillmg. Hacr on baking »hcet. Cover <ach sandwich with a thin slice of choene. Place in broiling oven, and leave until eheexe i« melted. Serve immediately with hot creamed mushrooms lor thickened mushroom soup) poured over them. Mushroom Sauce 1 lb. fresh mushrooms H cup a1!-purpoie flour or 4 cups milk 1 can mushrooms (h os. site) Salt and pepper eup butter Wash fresh mushrooms, remove xtcm« ami peel. Caps do not need to Ik pcek-d. Cut stems and caps m puces. If canned mushrooms are U’ed, drain well and slice thin Cook gently in butter far 20 minute*. Rh nd in flour and seasonings. Add cold milk slowly, stirring constantly.' R« move from heat for a few minutes and »ttr to prevent lumping Return to heat and cook until thickened, stirring constantly. (Cook about 10 minutea over the direct heat or 20 minutes over hot water to eliminate the raw taste.)
