On them* principles, it’a easy to plan breakfaatg, dinners and suppera that will please them. But evening refreshments are a different matter. The frothy whipped cream liedecked affairs some wives revel in at their afternoon parties will never do when the men are to be present. Slice H small onion very thin, and add to potatoes. Sprinkle with IMi tsp. salt and H tsp. pepper. Cut ' H slices of bacon into small pieces and fry until crisp. Add 1 tbsp, sugar and 1 cup mild flavored vinegar and heat to the scalding point. Pour over the potatoes. Mix very carefully to avoid breaking potato slices. Let stand over hot water for a few minutes until ready to serve. This recipe makes 10 serv. ings. Chicken a la King Melt 4 tbsp, butter in saucepan over low heat. Blend in 4 tbsp, flour, *A tsp. salt and % tsp. pepper. Slowly add 1 cup chicken broth, % cup milk, and '« cup cream, stirring constantly. Remove from heat for a few minutes and stir to prevent lumping. Return to heat ami bring slowly to boiling point, stirring constantly. When thickened, remove from heat. Blend in 1 cup diced cooked chicken (one C ox. can), ‘/i cup mushrooms (one 2-ox. can) and sauteed in 1 tbsp, butter, W cup pimirnto, cut in small strips. Place over hot water until mixture is heated through (about 5 minutes). Just before serving, add 1 hard-cooked egg, diced, and 2 tbsp, cooking sherry, if desired. Serve in flaky pastry tart shells or on hot bisi cuita. This recipe serves C to H. Shrimp a la Newburg Melt I tbsp, butter in saucepan over low heat. Blend in 4 tbsp, flour and I t«p. salt and a few grains c ayenne pepper. Acid 2 cups rich milk slowly, stirring constantly. Remove from heat for a few minutes and stir to prevent lumping. Return to heat and bring to boiling point, stirring constantly. When thickened, add 2 cups fresh eooked or canned shrimps. Just before serving, add 2 beaten egg yolks and 1 tbsp, cooking sherry or lemon juice. Serve over hot biscuits or toast or in patty shells. ' Garnish with parsley and thin t strips of pimiento.
