You often hear • girl or man mentioned—particularly among the ■ younger set—as “having everything!” Now this mysterious “everything ’ —as far as I can discover—has nothing whatever to do with mat«>rial possessions. It seems to be a combination of allure, charm, looks and personality that will put the person possessing it right up in . the front ranks wherever he or she may go. So I was amused the other day, when 1 heard a girl applying this term to a particularly delicious dessert she was eating. Then it occurred to me that this was an accurate and to-the-point way of saying she thought the dessert had appetite appeal as far as appearances went, and that it lived up to this I appearance as far as eating went to sueh a superlative degree that it I took its place in the front ranks of foods she’d be glad to meet again. And that’s exactly what I mean when I tell you this Cranberry Pie has “everything" in the wav of appearance and eating enjoyment. It’s especially festive-looking if you make it with a criss-cross lattice top crus’ ’’or then the bright red jewel-like fruit shows between the flaky gi>- n brawn pastry bars. And. as far as eating goe», it's a refreshing flavorful challenging sort of pie in a happy contrast with gooey-cloyir.gly sweet desserts—or rich hearty steamed puddings. You’ll find it fits in beautifully after a meal of rather bland, mildflavored foods —such as chicken —rice, peas and carrots—and a lettuce, I celery and apple salad. This Cranberry Pie adds the arresting splashing color contrast and the sharp sprightly flavor that gives the meal character and personality. Here is the recipe: Cranberry Pie I'A eups all-purpose flour 2 tbsp, all-purpose flour (for H tsp. salt thickening) U cup shortening H tap. salt Ice water (3 to 4 tbsp.) % tsp. nutmeg 1 tsp. melted butter Vi cup cold water 1H to 2 cups sugar (depending on 2 cups cranberries personal taste) 1 to 2 tbsp, butter Sift flour once before measuring. Sift flour and salt together. Cui in shortening with 2 knives or a pastry blender—leaving some of th< shortening in lumps the site of giant peas. Add iee water. (Sprinkle the water lightly--a little at a time—over the flour and shortening. At first, blend it in gently with a fork; then gather dough t g< iher lightly with the fingertips. As soon as you can make dough stay together, you have plenty of water in it.) Round up dough on lightly floured clothcovered board (flour rubbed into the cloth keeps the dough from sticking). Divide the dough, using the more generous half for the under crust. Roll out this more generous half '4 Inch thick to fit pie pan. Put into pan very loosely to avoid stretching. Let pan rest on tablr while cutting off extra dough. Brush dough in the pan with melted butter (to prevent soaking of filling into lower crust), and chill thoroughly. Roll out second half of dough for top crust of pie ( leaving a little extra to extend beyond edge of pan. Fold in half making several cuts through which steam may escape. Unfold, place on waxed paper, and ehill thoroughly (For a "lattice" top, see directions below.) Make Cranberry Filling as follows: Mix sugar, flour, salt, anil nutmeg together. Add cold water, and stir to mix thoroughly. Add cranberries which have been chopped or cut in ouarters. Place Cranberry Filling in under crust in pie pan. I>ot with cutter. Wet edge of under erust Lay top erust gently on top us filling folding ext.-a rim of pastry Mder edge of lower cruet Pinch the 2 edges together, and build up a fluted edge. Bake 10 minutes in a hot oven. 460' F., then reduce heat to 350* F., moderate oven to finish baking, about 40 minutes. This makes one deep 8-inch pie. Lattice Top for Pins: A lattice ’op Is very attractive on a erthberry pic. After rolling out the dough for the top erast, cut it into strips '4 inch wide. Weave the strips together lattice-fashion on waxed paper, md chill thoroughly. Then lay the lattice top on top of filling in pie pan. Cut off ends extending beyond edge of pan. Pinch edges of upp< r and lower erust together as when building up a fluted edge for a pie with a plain top. , — < 1999 M Rrtty r*-«Ur.
