Brown the diced onion and mushrooms, cut up small, in I t,r ' *" *' oor i t b ,n ro 'U c . and add seasonings. Mix with egg plant Fill the egg plant shells and cover with buttered crumbs. Place in casserole and bake 20 minutes in a moderately hot oven, 400* F, Amount: 8 servings. Note: Thio may be baked in a shallow baking dish in place of the egg plant shells. Place scalloped mixture directly in dish, cover with buttered crumbs and bake as directed. Egg Plaat Cheese Ssndwichea I medium-sixed egg plant I 2 eggs H lb. yellow American cheese 2 to 3 cups eraeker erumbs II "sandwiches" by placing a thin slice of eheese between two •"r** *EE plant (each slice 4* inch thick). Sprinkle cheese with salt and pepper. Dip "sandwiches” into beaten eggs and then in cracker erumbs. Fry in butter or bacon drippings until golden brown on tach side. Amount: 10 "sandwiches". Question: 1 baked a cake with some cake flour I’d had on my shelf for over a year. It looked alright. But the cake seemed to fall to pieces and it stuck to the pan when I tried to get it otrt. Do you think that couM have been on account of the old flour? 1 have a new electric range—and I baked the a the temperature called for in the recipe. Answer: The oldness of the flour could not have been responsible for your trouble. But there are a number of other possible causes—such as improper preparation of the pan—it should be greased with a mild-flavored unsalted shortening and then dusted with flour. The cake should not be allowed to stand in the pan too long after coming from the oven. Check your oven to see that your regulator is registering correctly.
