Sift twice Gradually beat 1 cup of the sugar into the beaten egg whites. Fold in the flavoring. When done take from oven, and invert the pan with the cake in it until the cake is entirely cold. Sift all the fiour twice, and then sift 1 cup of the sugar with U cup cocoa Continue as for the white angel food using vanilla for the flavoring; If you want to make a regular-sised angel food into a chocolate i “•*«*? fl our instead of the I cup called for in the recipe— I and sut M cup cocoa with 1 cup of the sugar. Os course an angel food—either white or chocolate—can stand on its own merits without the aid of decorations or icings. However if you wish to add a thin coating of glossy satiny chocolate iemg to yiur | chocolate angel food—here is a recipe you wiU want to use: Creamy Chocolate leing | Combine in a deep bowl 1 cup of sifted confectioners’ sugar. 1 unbeaten egg. M cup milk, H tap. vamlla, 2M sq unsweetened chocolate < 42M oat melted, and 1 tbsp softened butter. Beat with a rotary beater until completely blended. Then place the bowl in a pan of ice water or cracked ic< (having ice water or ice reach at least 4 the depth of the icing). Beat 3 to 7 minutes—or until the icing is of the right eons latency to spread over the ton and sides of the cake. Thia reetpe nmkes enough icing for a 10-inch angel food.
