Well oat all kinds of cake and . cookies with our fresh raspberries I or raspberry ice cream. But a cake with raspberries right in it is not so frequently encountered. And I think this is too bad—because a Raspberry Cake covered with a luscious Raspberry Icing is not only a novelty— it's downright good eating. So for those of you who've never made a Raspberry Cake. I'm offermg the following recipe to serve with plain vanilla ice cream or lemon sherbet: Raspberry Cake H cup shortening 1H cups sugar 8 eggs xT.* 2 cups cake flour or ! l*i cups all-purpose flour 2’s tap. baking powder S Up. salt *4 cup milk 1 cup crushed fresh raspberries (I‘4 cups uncrushed > 2 tbsp, cake flour or all-purpose flour Cream -shortening, add sugar gradually, and cream thoroughly. Blend in well beaten egg yolks. Bift flour once before measuring.

Sift flour, baking powder, and salt ' together and add to the creamed I mixture alternately with the milk. ■ Carefully fold in the crushed ber- ' nes sprinkled with the extra 2 tbsp, flour and the stiffly beaten I egg whites. Pour into a well Kased F inch square pan which been lined with wrapping pa-per-having the ends of paper come up above the edge of pan. i Bake 45 to 50 minutes in a modi erate oven, 350 •P. Remove from >ven, let cool 5 minutes—then lift out of pan by ends of paper. When cool, pull off paper and spread Fresh Raspberry Icing over the cake or serve with slightly sweetened whipped cream. Decorate *ith whole perfect raspberries. Freeh Raspberry Icing % cup sugar H cup water 2 egg whites 6 tbsp- whole fresh raspberries Mix sugar and water together in saucepan. Boil slowly without stirring until mixture spins an 8-inch thread. 240 to 242* F.. keeping pan covered for first 3 minutes of cooking to prevent crystals forming on sides of pan. Pour hot syrup slowly into stiffly beaten egg whites — beating constantly with rotary beater. Continue beating with spoon until mixture is fluffv and will hold its shape. Beat in fresh raspberries. Amount: Icing for one 8-inch square cake.
