Strawberry Festival Cake-rec-ommended with the Baked Ham Dinner—is a cake dessert you’ll •rant to serve very often during the strawberry season. Here is the recipe: Strawberry Festival Cake ’* cup shortening (part butter for flavor) IMi cups sugar 3 eggs 2*i cups cake flour or 2t* cups all-purpose flour 3 tsp, baking powder tsp. salt 1 cup fresh coconut milk (water may be added to All the cup) 1 cup finely grated fresh coconut 1 tap. almond extract Cream the shortening, add the sugar gradually and cream thoroughly. Blend in the well-beatea egg yolks. Sift the flour once before measuring. Sift the flour, i baking powder and salt together and add to the creamed mixture alternately with the coconut milk. Blend in the grated coconut and flavoring. Carefully fold in the egg whites which have been beaten until stiff but not dry. Pour into well-greased and floured pans, and bake for 25 to 30 minutes in a moderate oven. 350' F. You can use either three 8-inch round layer pans or two fl-inch round layer pans. Fresh Strawberry Frosting Beat one egg white until stiff enough to hold a point. Gradually add \ eup sugar and % cup crushed strawberries (including the juice) alternately—about 2 ' tbsp, at a time—until all are u*ed Beat well after each addition with a rotary beater. Continue beating until the mixture will hold its shape —from 8 to 10 minutes.
