1 of a young fowl is the breast bone, ■ which is pliable rather than stiff i and bony. The method of roasting is determined by the age of the bird. A young turkey is considered best in flavor when roasted in a slow oven in an uncovered pan. Start it in a moderately hot oven (375-400 degrees F.- and roast it just long enough to start it browning, then reduce the temperature to 300 degress F. for the rest of the cooking time. For an older bird, follow the usual method for the first half hour, then cover it closely so that the steam softens the less tender muscles. Twenty-five minutes to the pound should be allowed for small turkeys and 20 minutes to the pound for large ones. The weight should be estimated after the bird is stuffed and dressed.
