I 3to 4 pound breast of vesl > J 4 cup fat 1 onion, sliced 1 tablespoon paprika Thyme of sage 1 tablespoon chopped parsley 4 cups bread crumbs I Li cup sliced carrots j Mt cup sliced onion* veal stock Have meat Ironed and a pocket made for the stuffing. Wash and wipe well. Prepare the stuffing in the following manner: Cook onion in fat 5 minutes; add paprika, a bit of thyme or sage, parsley amt miv with the soft bread crumbs. Fill the ipocket and tie or skewer the opening. Sprinkle with salt and pepper. Place meat on rack in roasting pan, rub surface with fat sprinkle with flour and put a slice I of bacon across the top. Pour 1 cup stock in bottom of the pan and cook lin a hot oven 15 minutes. Reduce heat to moderate and cook for at least I>£ hours longer. Haete often, | adding more stock as needed When
