PINEAPPLE UPSIDE DOWN CAKE cup Spry (new veeeUble ■nortening) W teaspoon ealt I teaspoon vanilla ’4 cup sugar I egg, unbeaten 1W cupa sifted flour 1 1 , teaspoons baking powder H cup canned pineapple juice M cup brown sugar, firmly packed 6 slices canned pineapple 6 maraschino cherries (optional) Combine Spry, salt and vanilla; add sugar gradually and cream until light and fluffy. Add egg and beat thoroughly. Sift flour and baking powder together 3 times. Add small amounts of flour to creamed mixture, alternately with pineapple juice, beating thoroughly aft er each addition until smooth. Sprinkle brown sugar on bottom of deep 8 x 8-inch pan, greased liberally with Spry. Arrange pineapple slices on sugar, put cherries in centers of slices, and pour batter over all. Bake in moderate oven (350’ F.) 50 to 60 minutes. Serve upside down with' whipped cream. Makes 8 to 10 portions.

Pare, core, and thinly slice apples. Fill 9-ounce casseroles half full of apples. Mix brown sugar, salt and allspice together. Put halt over apples. Fill casseroles with remaining apples and cover with rest of sugar mixture. Dot tilling with butter. Roll Spry dough '.-inch thick; cut in rounds 1 inch larger than casserole. Cut small design in top, turn edges under to fit casseroles, place over pies, and seal edges with fork. Brush with cold water and sprinkle with granulated sugar. Bake in hot oven (425 J F.) 25 to 30 minutes. Serve warm with Snowy Peak Sauce and a dash of nutmeg. Makes 6 pies. SPRY PIE CRUST 2 1 G cups sifted all-purpose flour 1 teaspoon salt % cup Spry (the new all-vegetable shortening) 5 tablespoons cold water (about) Sift flour and salt together. Add H of Spry and cut. in until mixture is as fine as corn meal. Add remaining Spry and continue cutting until particles are size of a navy bean. Sprinkle water. 1 tablespoon at a time, over mixture. With a fork, work lightly together until a dough is formed. SNOWY PEAK SAUCE 2 tablespoons butter * 2 tablespoons Spry H teaspoon salt >4 teaspoon grated lemon rind % cup sifted confectioners’ sugar Combine butter. Spry, salt and I lemon rind and mix well. Add sugar ' gradually, beating well after each j addition. I

Because the Decatur Daily Democrat and progressive merchants and dealers of the city believe that see ing is understanding, a free cooking school will be presented for the ladies of this community in the Adams Theater, Monday. Tuesday and Wednesday afternoons—in a friendly class where every fascin|ated listener will have a closeup i of what is happening in more than i one model kitchen. Straight from Hollywood, where !it was skillfully directed, filmed and interpreted by a quality cast. "The Bride Wakes Up." is the latest 1937 model cooking school. Craning necks and anxious eyes, trained on the stage from the sides and back of the demonstration hall, failed to catch all of the important steps in pastry-making and other culinary arts in the old type of cooking school where only the early birds in the very front row had a close-up of the stage and even they couldn't peer directly into the mixing bowl. The wizardy of the camera has solved this problem in “The Bride Wakes Up" and every person In the Adams theater next week will have a “front row seat” in a model demonstration. Although a sprightly romance has been built around a real plot, it also shows y planned home kitchens, designed expertly for the utmost in convenience, j time-saving and comfort. All of the practical equipment is seen in active use, while trained hontp economists blend helpful sugges tions with their shortening. It won’t be necessary to carry pad and pencil and try to scribble measurements in the darkened theater. for free recipe sheets, with complete formulas for many of the delicious dishes prepared in this picture school will be distributed daily. o New Air Mark Moscow.—j(U.R>—The test pilot Y. 1937 Sugar Sa/e Opens; Va/ua6/e Asset To Decatur (A HOME TOWN INDUSTRY) Decatur makes its own sugar. Decatur should use its own sugar. Indiana's only beet sugar refinery, located at the north door to our city is turning out tons of Sparkling Crystal White sugar. A regular force of office, factory and field workers of about 100 men and women are employed throughout the year. Between 1000 and 1200 beet workers are employed in the seeding, growing and harvesting of the crop. A fleet of several hundred trucks is operated during the season in the delivery of the beets to the local mill. Thousands of dollars are paid to the men for their labor and services in the mill and in the territory. For every 100 pounds of sugar manufactured, eight hours of labor are necessary. Multiply that by 20 million pounds of sugar. One of the greatest industries in the country is being 1 built in* Decatur. The whole community benefits in many ways through I the operation of the plant. Decatur is becoming one of the busiest and heaviest shipping points between Chicago and Pittsburgh. Factories are springing up like castles along the river front in the sugar factory district. When you buy and use sugar made in Decatur you help yourself and community! and cream until light and fluffy (no bother at all with ready-creamed Spry). Sift flour and baking powder together 3 times. Add small amounts of flour to Spry mixture, alternately with milk, beating after each addition until smooth. Beat egg whites until stiff but not dry. and fold carefully into mixture until well blended. Pour batter into two 8-lnch layer pans greased with Spry. Bake in moderate oven (350’F.) 25 to 30 minutes. Spread Lemon Filling between layers and sprinkle top with confectioners' sugar rubbed with lemon rind. LEMON FILLING 3 tablespoons cornstarch cup sugar teaspoon salt !-_> cup hot water 3 egg yolks, slightly beaten % cup lemon juice i/j teaspoon grated lemon rind 2 tablespoons butter Combine cornstarch, sugar end salt in top of double boiler and mix thoroughly. Add hot water and stir until smooth. Cook over hot water until smooth and thick (15 minutes). Pour over slightly beaten egg yolks, return to double boiler and cook 1 minute longer. Add lemon juice, rind and butter and blend well. Cool and spread between cake layers. This recipe makes enough filling to spread between two 8inch layers.
