H A M For some culinary reason ham seems to be first choice in planning Easter meals. Its clean, fine flavor and the variety of ways in which It may be prepared appeals; to good cooks. Then, too, it combines perfectly with spring vegetables and completes a perfect meal. BAKED WHOLE HAM Place a 12 to 14 pound ham with 2 cups of water in covered roaster and bake in a moderate oven, allowing 21 minutes to the pound | For small or half hams allow 25 minutes to the pound. Skin, score and dot with whole cloves and chopped candided cherries. Baste with melted apple jelly and brown in a hot hove tor 20 minutes. 1 cup water in which apricots were cooked >• teaspoon cloves 1 tablespoon butter Have the ham cut about 1 inch , thick. Brown lightly on both sides I in a hot frying pan and place in a I I baking dish. Spread with apricot| I pulp mixed with cloves and add 1 water. Cover and place in a cold ? oven until ready to bake. Bake in a moderate oven for 1% hours. Uncover during last half hour of baking. HAM A CORNBREAD Shortcake % cup flour 4 teaspoons baking powder 2 tablespoons sugar 1 teaspoon salt IJ/j cups corn meal IJ4 cups milk 1 egg. beaten 4 tablespoons melted shortening. Sift together flour, baking pow- i | der, sugar and salt. Add corn meal and mix well. Add milk, beaten egg
and melted shortening. Pour Into a greased 8-inch square pan. Bake in a hot oven about 25 minutes Split while hot (first cutting in a-[ bout 8 pieces if desired), butter and put together with Creamed Ham. CREAMED HAM 2 tablespoons butter 4 tablespoons flour s • a teaspoon salt Small piece of bay leaf < 2 teaspoon onion juice 1 whole clove 2Va cups of milk cups cooked ham cut in 1.4 inch cubes Melt butter; add flour, stir tin- | til well blended. Add seasonings. I Add milk slowly, stirring constanti ly until thick and smooth. Bring to a boil and boil 2 minutes. Add ham. PLANKED HAM PUFF Mix equal quantities of chopped cooked ham and mashed potatoes. Season to taste with salt and pep-| per. To each 2 cups of mixture add I | 1 egg yolk, and fold in the stiffly | I beaten egg white. Pile the ham ■ mixture in the center of the hotj plank and sprinkle generously with grated cheese. Bake in a slow oven about 30 minutes. Garnish with a border of hot string beans. If de-1 i sired the ham and potato mixture | I may be made in individual puffs j 1 instead of the large puff. MACARONI WITH HAM 1 cup macaroni 2 tablespoons butter 2 tablespoons flour I*4 cups scalded milk 2-3 cups grated cheese salt and paprika 1-3 cup chopped ham Break macaroni into small bits and cook in boiling salted water] 12 to 15 minutes; drain and let cold water run over macaroni to blanch it. Make a sauce, using the I I butter, flour and milk; add cheese ■ and as soon as the cheese is melt-i ed add salt, paprika and macaroni. I Let heat through and turn into a' serving dish.
