RECIPE TIPS FOR APRIL
PROMISE OF SPRING . IN EASTER DELICACIES Easter menu* are prepared with especial pleasure. For now the markets are filled with foods that suggest the coming of spring—there are fresh vegetables and fruits in plenty and their variety is a'challenge to the clever cook. Because ham is the traditional Easter meat, you may wish to use it as the center of your menu plan. But it jv.'ur preference run* to lamb—that too is appropriate for the Easter feast. Here are delectable ways to prepare both meats. BAKED WHOLE OR HALF HAM Place a whole or half ham in a roaster. Add 2 cups of water and i cover the roaster. Bake in a slow ■ oven allowing about 21 minutes to 1 the pound for a large whole ham; 1 about 25 minutes a pound for i smaller (up to 12 pounds) or half I hams. When ham is done remove from oven. Lift off rind. Score surface and dot with cloves; rub with a mixture of 1$ cup bronw sugar 1 and 1 tablespoon of flour. Pour ov-I 1 er the contents of 1 pint bottle of > grape juice or sherry if preferred. 1 Baste and brown uncovered in a J hot oven for 20 minutes. —— ' BAKED HAM WITH ORANGE 1 Place a ham fat side up in a 1 baking pan, add 1 cup of water and ‘ bake at 300 degrees till tender. Al- ’ low about 20 minutes to the pound, i * Take it from oven, remove rind, I score fat, pat in brown sugar and 1 stick in the fat tiny diamonds of orange peel. Remove excess fat • 1 from pan and replace ham in oven ' < heated to 350 degrees for 30 to 50 i minutes. Baste 4 times with % cup s of orange juice for each basting. < When well browned remove from ; oven and serve hot. If preferredl plunge the raw ham in boiling wat-; er, reduce the heat and simmer till; tender, allowing 25 minutes to the pound. Drain, remove rind and fin- ■ ish in the oven.

,CREOLE SHOULDER OF LAMB 3 to 5 pound shoulder of lamb 2 cups cooked tomatoes 1 chopped green pepper 1 tablespoon chopped parsley 1 tablespoon sugar 2 cups boiling water or vegetable stock. 1 teaspoon salt pepper paprika Have the land s'iould«r boned and rolled. Wipe it with a damp cloth and place it in an open roasting pan. Brown it in a hot oven and season it with salt, pepper and 1 paprika. Mix together tomatoes or tomato Soup, onion chopped, green pepper, chopped parsley, sugar, salt and boiling water or vegetable stock. Pour this over the meat, reduce the oven temperature and cook. Use the liquid in the pan remaining after cooking for making gravy, thickening it slightly. CROWN ROAST OF LAMB Have the butcher trim down the layer of fat on the chops, but do not have the insWTe filled with ground meat when the roast is tied up. Rub the meat with salt, pepper and flour, and place on the rack in a shallow roasting pan. Slip pieces of raw potato over the ends of the ribs to prevent charring. Roast uncovered in a hot oven for 20 minutes, then reduce the heat to 300 degrees and cook for 1 hour longer. Remove from the oven and fill the center with a dressing made as follows: Saute % cup of chopped lamb, 2 cups of chopped mushrooms, 1 cup of celery and 1 small onion (chopped) in 3 tablespoons of shortening. Add 3 cups of bread crumbs, salt and pepper to taste and 4 tablespoons chopped parsley. FRUIT SALAD DRESSING 4 tablespoons vinegar 2 eggs beaten together Cook slowly until creamy, stir-|
ring all the time. Take from fire and add 1 tablespoon butter, 2 teaspoons sugar and a pinch of ® salt. Let cool and mix with halt a pint of whipped cream; do not blend In the fruit until ready to serve. BANANA MAYONNAISE Force a ripe banana through a sieve. Whip to creamy smoothness. Blend with tin equal amount of mayonnaise and use to dress fruit salad. 1 SIMPLE SALAD DRESSING ) Beat 1 cup of sugar and 1 egg 1 together until creamy, add a pinch I of salt and thin with vinegar to " suit the taste, the pour over salad, i This is delicious with cabbage sal- , ad. I BOILED DRESSING 2 tablespoons flour ■ 2 teaspoon mustard 1 teaspoon salt '/a teaspoon red pepper 3 tablespoons granulated sugar 1 tablespoon butter (a cup vinegar <2 cup water Mix the dry ingredients. Then add the butter, vinegar and water. Cook over boiling water until thick, stirring constantly. Beat eggs and gradually pour the hot mixture over them. When ready to serve add a little cream, plain or whipped and lemon juice to thin.
