North, or South, you will find the stuffing for the roast an important part of the holiday dinner. Tito kind of stuffings most in favor depen“ somewhat on tradition, but for the most part, the kind of meat and personal preference are the deciding factors. For pork, a fruit stuffing, either apple, prune, or apricot, or chestnut stuffing with celery and onion for sea-, soning are the favorites; a mint or sausage stuffing lead the list, with lamb; and rich mushroom stuffing is particularly good with veal. Recipes and suggestions for using these are given below by Inez S. Willson, home economist. ! Prune and Apple Stuffing With Crown Roast of Pork 2 slices salt pork, diced 2 apples 1 cup diced celery 1 medium sized onion, finely cut cup green pepper, finely cut 1 cup cooked prunes 2 cups bread crumbs Meat stock or water Salt and pepper Dice the salt pork and fry it out > in a skillet. Add the diced apples, and let cook until tender. If the j apples are very tart, add a bit of; sugar. When the apples are nearly i tender, add the celery and onion ( and cook for a few minutes. Place on ■ a rack in an open roasting pan and r roast in a moderate oven (300 F.) i until done, about tnree hours. 11 Sausage Stuffing With Boned Lamb Shoulder ! ’4 pound bulk sausage 2 tablespoons grated onion 2 tablespoons chopped parsley I 1 cup bread crumbs Salt and pepper Meat stock or water Fry the sausage with the onion and parsley, stirring constantly until the meat is cooked enough so it separates into particles. Add the i bread crumbs and seasonings and j enough liquid to make a moist . dressing. While hot, pack into the I lamb shoulder and sew or skewer the edges of cavity together. Place ‘ on a rack in an open roasting pan . and roast at a low temperature I (300 F.) until done. Allow about ' thirty-five minutes per pound for l roasting. Apricot Stuffing With Boned Pork Shoulder I 1 cup apricots 2 cups soft bread crumbs ’ 4 cup melted butter* j teaspoon celery salt Salt and pepper Water to moisten Wash the apricots, and soak them < I until they are partially freshened. The latest edition of the paper ! went to press a short time before the hour set for funeral services for Walter Liggett. He was shot down by machine gun bullets Monday night, supposedly because of attacks on gambling, vice, and political corruption printed in his I paper.
