FRUIT IN SALADS ALWAYS BETTER
Pear Macaroon Salad Halves of canned pears. 1 package creain cheese. Macaroon crumbs. Maraschino cherries. Mash cheese, and spread a thin layer on a half of pear. Cover with another half of pear and dip the whole pear, thus formed, In ground macaroon crumbs. To prepare | crumbs, roll dry macaroons finely with a rolling pin. Serve the fruit | in a deep cup of crisp lettuce, gam-' ishing the top with a Maraschino cherry, cut in half. Place a spoon-I fttl of mayonnaise at cne side. CHOOSE FISH FOR VARIETY Jellied Salmon I>4 tablespoons gelatin. ’* cup-cold water. 2 cups boiling water. 4 tablespoons lemon Juice. 1 tablespoon sugar. 14 teaspoon salt. 1 No. 1 ean salmon. 2 hard cooked eggs. . 5 cup diced celery. 2 tablespoons shredded green pepper. 6 stuffed olives cut into halves lengthwise. # Soak the gelatin in the cold water 5 minutes. Add the boiling water and stir until gelatin isTlissolved. Add the lemon Juice, sugar and salt and pour a portion of the gelatin mixture into a large mold. Set in a pan of cracked ice and water until firm. Then arrange the I salmon in 1 piece in the center. • Arrange the eggs cut in slices or quarters, the celery, green pepper and olives around the salmon and pour over the remaining gelatin. Chill until firm. When ready to serve, turn out on a platter and garnish with slices of cucumber. 1 mayonnaise and radish roses. 1

1 Tuna Fish And Mushroom Casserole 2 tables|>oonfuls butter. 3 tablespoonfuls flour. 1 16-oz. can cream of mushroom soup. 1 7-oz. can tuna fish. 3 hard cooked eggs, sliced. Drop biscuit dough. Melt butter in a saucepan, add flour and biend well. Add soup and cook, stirring constantly, un-1 til thick. Drain oil from tuna fish j and break fish into small pieces. 1 Add fish and sliced hard cooked 1 eggs to thickened soup, pour into I casserole and cover with drop bis-1 cuit dough. Bake in a hot oven | (475 F.) for 12.t0 15 minutes.
