A CLEVER COOK MEETS LENTEN CALL FOR MEATLESS MEALS If you are a strict follower of “meatless meals for Lent’’ you’ll find something of a challenge to provide menus that are at once satisfying and appealing unless you make a real study of meat substitutes in advance. If you do go into the subject seriously you’ll be surprised and gratified at the number and variety of tempting dishes that may be prepared without meat in any form. There's fish, of course, but that will become an old story if served too often, so vary your menus with other meat substitutes as well. Here are some savory "ways out" for the Lenten season. ______ _

Cover the top with fine crumbs, dot with butter and bake in a moderate oven until the sauce bubbles and the crumbs are golden brown. Filet of Sole Ma r guery One and a quarter pounds of filet of sole will be required for four people. Cover sole with pieces of buttered wax paper and place in a pan with fresh creamery butter, salt, a pinch of pepper, a bit of thyme and enough white wine to cover. Add 2 mushrooms, 2 shrimps and a large oyster cut in half for each piece of sole. Cook slowly in oven for 20 minutes. When finish-

Add a few chives and cook slowly, stirring constantly until the sauce thickens. Place each piece of sole on the platter and I garnish each with mushrooms and shrimps and oysters. Serve sauce over the whole. Salmon Cutlets 1 cup cele r y cut fine 1 cup canned salmon 1 cup dry bread crumbs 1 teaspoon grated onions ■/z teaspoon salt ■/ 2 teaspoon paprika cup mayonnaise fat for deep frying Parboil celery for 10 minutes in ] unsalted boiling water. Drain. Re-. move skin and bones from salmon. | Mix celery, salmon, % cup bread ' crumbs, seasonings and mayon-1 naise. Form into cutlets. Roll in I remaining bread crumbs. Deep fry. When cutlets are golden brown | drain on absorbent paper. Halibut a la Martin Clean 2 slices of halibut and cut in filets. Season with salt and pepper and brush with lemon juice. | Arrange on a tin plate covered with i cheese-cloth and fold cloth over filets and cook in a steamer 15 minutes. Remove to serving dish, garnish with small shrimps and pour: white sauce over all and sprinkle] with grated cheese. Salmon Chops 1 tablespoon butter 2 tablespoons flour 1 cup milk 1 teaspoon salt [/ g teaspoon pepper 1 cup bread c r umbs 1 can salmon Make white sauce by melting' butter and adding flour and seasoning. Blend well. Add milk slowly, stirring constantly. Cook untill thick. Add bread crumbs and sal-1 mon. drained. Shape like chops. ' Fry in deep hot fat until nicely browned. Serve with peas and boiled potatoes. Tomato and Macaroni 2 cups cooked macaroni 1 cup milk 1 tablespoon flour 2 tablespoons butter J 4 cup g r ated cheese 2 or 3 tomatoes dried bread crumbs salt pepper Melt butter, stir in flour and I slowly add milk. Stir constantly. I Bring to the boiling point and stir j in grated cheese. Remove from' heat and add macaroni. Mix thor- i oughly and spread in a shallow' buttered baking dish. Peel toma-1 toes and cut in halves. Lay these over the top. Sprinkle with salt and pepper and dredge with dried I bread crumbs. Dot with bits of butter, sprinkle with more grated cheese and bake in a moderate oven until the tomatoes are soft and the top a rich brown. Lima Bean Loaf Two cups of lima beans, cooked. Mash the beans and add 1 wellbeaten egg. Add one small onion, chopped fine and 2 tablespoons to-1 mato ketchup. Then add 1 cup fine | bread crumbs, 1 tablespoon Worcestershire sauce and salt and pep-1 per to taste. Put in a greased loaf tin and bake in a moderate oven for about 30 minutes. Vegetable Hash Chop fine 1 cup potatoes 1 cup beets 1 cup carrots 1 cup cabbage Add 1 cup cooked peas or finely cut string beans, 1 tablespoon finely shredded onion and 1 tablespoon celery. Mix thoroughly and turn into a hot well greased skillet and add 1 tablespoon butter or other fat, 1 tablespoon vinegar, 3 tablespoons cream, salt, pepper and paprika. Stir well for 5 minutes, then pat down, lower flame and leave to cook slowly till brown o n the underside. Sprinkle with ketchup. Fold over and slip onto a hot platter. Cheese Bean Roast 1 pound kidney beans / t pound American cheese 1 onion chopped fine 1 tablespoon butter 1 cup bread crumbs salt, pepper, paprika to taste I 2 eggs Drain liquid from beans and I rinse in clear water. Put beans and cheese through meat chopper. I Cook onions in butter. Combine ingredients, add seasonings and I beaten eggs. Mold into a loaf or roll, moisten with melted butte. I and roll in bread crumbs; or pack firmly in a buttered baking dish ' and bake in a moderate oven until well browned. Serve with toma- ' to sauce.
