Candies Delicious home made candies * may he made by preparing a fond--1 ant of 2*4 pounds sugar, Ity cups • boiling water and *4 teaspoon ‘ cream of tartar. Bring to the soft 1 hall stage when tested in cold wat- • er. Pour on lightly buttered platter. 1 When cool enough to handle stir * with a wooden spoon until creamy, knead until smooth. Set away for 24 hours. Then the fondant is ready to form into all sorts of novel candies, tinted and flavored as your taste dictates. Steamed Cherry Pudding Drain canned cherries from syrup. Make batter of 1 cup flour. 1 teaspoon baking powder, Q teaspoon salt and milk mix to a drop batter. Butter pudding cups, add 1 tablespoon of batter, then 1 tablespoon cherries. Cover with batter, leaving room for rising. Set cups in hot water, cover and boil 15 minutes. Serve with cherry sauce. Spice Cake Cream 1 cup shortening, arid 2 cups sugar gradually. Add 4 beaten egg yolks. Sift 3 cups cake flour, add 2 teaspoons baking powder, fa teaspoon salt, 1 teaspoon cloves. 1 teaspoon allspice, 1 teaspoon cinnamon. Avid 1 tablespoon shaved citron to flour and add alternately to creamed mixture with ’ t cup fruit juices and 1 cup milk. Add 3 squares melted chocolate. Fold in 4 stiffly beaten egg whites and pour in pan lined with greased paper. Bake 45 to 6U minutes in moderate oven. Judge Curtis W.
