Add to ; these vegetables the hamburger i steak, cheese, beaten egg and salt and pepper to taste. Form into balls and fry until brown. Remove balls I to hot pan and make gravy front the driprings in pan by adding flour 'and stir until smooth. Add tomato I soup and 3 tablespoons chopped parsley. Now put balls into gravy and let simmer slowly, one hour. They are nicer if cooked and left standing in the gravy a few hours and then reheated. Savory Casserole i.j, cup onion. y 2 cup finely chopped green pepper. 1 package wide macaroni, 1 email can tomato juice. ■ 4 teaspoon salt. • 8 teaspoon pepper. 3 4 pound chopped pork. Cut onion ill very small pieces. I fry in butter until brown. Cook macaroni until soft. Drain and pour | cold water over it. Add all ingredients together mixing thoroughly. The most ordinary vegetable will lake on appetite appeal If It is served with the culinary skill that suggests the following recipes: Corn au Gratin 1 cup canned corn. 2 egg yolks. 1 4 teaspoonful green pepper, minced. 2 tablespoons fat. 1 teaspoon salt. •/g teaspoon paprika. 1 cup cooked rice, '/i cup grated cheese. Drain the canned corn. Add yolks of eggs which-have been well beaten. Saute the green pepper and onion In fat until tender and slightly browned. Add to corn mixture with the salt and paprika. Add the rice, carefully folding it In with a fork. Turn into a greased casserole, sprinkling half the grated cheese on file mixture as a center layer I and the remaining half of the | cheese on top. Bake in a quick ovicnlor 12 minutes. Creamed Based Lima Beans 2 cups cooked or canned lima beans. '/> cup pimento, minced. 1 g teaspoon salt. 1 cup grated cheese. 2 cups white sauce. 2 tablespoons tomato catsup. 2 tablespoons melted butter. I - cup bread or cracker crumbs. Mix the lima beans, pimentos and II salt, cheese, catsup and white sauce together. Pour Into a casserole rubbed with shortening, then spread with crumbs mixed with with melted butter. Bake in a moderate oven, for half an hour. Scalloped Cabbage With Cheese and Nuts Shred one firm head of cabbage and cook for 12 minutes in an uncovered vessel in boiling salted water. Drain, chop fine and arrange in layers in a baking dish interspersed with layers of grated cheese and chopped nuts. Cover with white sauce and top with crumbs, cheese and chopped nuts. Bake in a hot oven for about 15 minutes. Tomato Souffle 1 can tomato soup. 2 tablespoons shortening. 1 teaspoon onion juice. I g teaspoon pepper. 4 egg yolks. a 4 cup sifted dry bread crumbs. ? 4 teaspoon salt. 1 teaspoon grated Italian cheese 4 egg whites. Combine the tomato soup, bread | crumbs, shortening, onion juice, sail, pepper, and cheese. Remove from fire. Beat Die yolks until thick and lemon colored. Add. <’ool. Beat the whites until dry and thick Fold in. Grease a baking dish. Pour in the souffle mixture. Bake in a moderate oven for forty-five minutes. Serve at once. Salads are another dish that will respond to originality in flavorcombination. As you experiment you will create distinctive and invitiffg salads that will add greatly > to the interest and variety of winter menus.
