French Pea Soup To 1 can of concentrated pea I soup add 5 lettuce leaves, shredi ded, 1 teaspoon salt, 1 tableI spoon sugar, 3 cups water. Cook ■ until lettuce is tender, rub through ‘ a sieve and add 3 chicken bouillon I cubes. Garnish with whipped I cream and chopped parsley. Ham Creole 1 I>/ 2 tbs. ham, •/» to 3 i inch thick 1 No. 2' 2 can tomatoes ■ 1 green sweet pepper (cut fine) I </ 2 teaspoon prepared mustard 1 small onion | 1 teaspoon sugar few drops Worcestershire sauce Brown ham quickly in a deep frying pan. Add the chopped pepper to the tomatoes, onion and seasonings. Pour over the ham. cover and let simmer slowly until I the ham is tender. Tomato Mold with Vegetable 4 teaspoons gelatine 2 tablespoons cold water 2 cups cooked or canned tomatoes 1 teaspoon scraped onion / 2 teaspoon salt 2 teaspoons sugar 1 teaspoon Worcestershire sauce 1!4 cups cooked lima beans 1 teaspoon onion finely chopped •4 teaspoon salt French dressing Mayonnaise Soak the g?latine in the cold water. Cook the tomatoes and seasonings for 10 minutes and strain off the liquid. Dissolve the gelatine in the hot liquid. Pour into a ring mold and chill until firm. Toss the beans, chopped onion, >i teaspoon salt and French dressing together lightly and chill 30 minutes. Drain thoroughly. When the jelly is firm unmold on crisp lettuce. Pile the vegetable mixture in the center. Serve with mayonnaise. Oatmeal Muffins 2 cups oatmeal soaked overnight in 2 cups sour milk. Just before needed add 2 teaspoons soda. 1 tablespoon sugar, a little salt and 1 cup flour. Bake in gem pane in a hot oven. Apple Betty 2 cups apple sauce unsweetened % teaspoon cinnamon 1 cup graham cracker crumbs 3 tablespoons chopped walnut meats y 2 cup brown sugar 1 teaspoon grated lemon rind 4 tablespoons butter 2 teaspoons candied orange peel Use thick apple sauce.
