Lorain Oven Canning . It is now commonly concluded by housewives and cookery experts that the Cold Pack Method of Canning is far superior to tho old kettle-boiling method. But the Cold Pack Canning Methods in common use require large heavy utensils, filled with, boiling water, ami a lot of labor that is unpleasant. The Lorain Oven Method of Canning is a Cold Pack Process but it is so great an improvement over other methods that there is no comparison. With the Lorain Oven Method no heavy washboilers filled with boTing water arc required. There is no standing over a hot stove stirring and straining. There is practically no lifting and pouring. The raw fruits and vegetables are pre pared in the usual manner. Then they’re packed in the glass jars in which they are to be preserved. The jars are then placed on the oven rack for the proper time and at the proper temperature, which varies somewhat according to the article being canned. When the specific time is up. the jars are removed and the lids tightened—and that’s all there is to it. JVith the Lorain Oven Canning Method fruits and vegetables are not boiled into a mush, but remain almost as firm as when packed. In fact, tomatoes canned in this manner stay firm enough to be used for winter salads, and the color and flavor remain practically identical with the fresh-from the-garden variety. The Oven Process of Canning is not entirely new. In a crude way it was tried out with coal and wood stoves many years ago, and even then was noted to be far superior to other methods. But the Oven Process did not gain headway nor could it have been called much of an improvement on other processes until American Stove Company brought out the Lorain Oven Iliat Regulator and with it developed Oven Canning to a point where today it is the most popular method of canning in the home.
