A Help for Every Housewife
Every homemaker appreciates a suggestion that will help her give variety to the food served in her home. But variety should not be obtained al the expense of food value, nor should it add to the manifold tasks of the housewife.
I Chocolate Sundae This pleasing variation in the serving of ice cream is easily prepared at *'o:ne. Mix a quarter cupful of cocoa with one cup of sugar. Slowly add a half cun of boiling water. Bring to the boiling point, and boil for five minutes. stirring constantly. Add one tcaspoonful of vanilla. Serve til's syrup over vanilla or chocolate ice cream. The syrup may . be served hot if desired, making the popular Hot Chocolate Sundae. Tropical Fruit Sundae Place a thin layer of pineapple on the bottom of the dish. Add a helping of vanilla ice cream. Over the ice cream pour a ladle of crushed pineapple, sprinkle with ground walnuts and top with a cherry. Beauty Sundae Place is a dish a serving of strawberry ice cream, and cover with crushed pineapple. Place a few cherries around the side, and top with whipped cream chopped nuts. Fruit Cream Chop very finely equal quantities pf dates, figs and raisins. To each half cup of the mixture add one cup of whipped cream. Serve with vanilla or strawberry ice cream.

In presenting this booklet of recipes for delightful ice cream dishes, we have aimed to enable the housewife to add many attractive variations to her menu, while providing the maximum of nutritive value at . the. minimum of cost and preparatory labor.
Ice Cream Pudding A very delicious ice cream pudding can be made by stewing a cupful of raisins in grape juice enough to cover them untT they are soft. Let them tet cold, drain and put in sherbet glasses; place on the top a big spoonfnl of vanilla ice cream, on top of this a few more raisins and decorate with a marshmallow. Strawberry or raspb rry preserve can be used instead of raisins if desired. Hot Butterscotch Sundae A serving of ice cream with bntter-r.-otch syrup poured over it is popular in many homes. Butterscotch syrup may be t made as rotiows: To every pound of brown sugar allow one anil a quarter cupfuls of water, end a quarter of a cupful of butter. If a scant ieaspoonful of baking powder is added to the sugar it prevents its crystallizing. It can. however, be made without this. Boil the mixture bit do not let it burn. Take it from the fire as soon a; it colors a golden brown. Serve hot over ice cream. • Combination Fruit Sundae Chop up and mix together the following: Oranges, pineapple, pears, peaches and walnut halves. Add simple syrup. This makes the frutt combination. 'Serve a ladle of his over a serving of vanilla ice cream, and top with whipped cream.

Looks Good Frozen Pudding Sundae The )>ase is vanilla ice cream, in which are raisins, chopped citron, candied cherries and nuts. Pour over this either raspberry syrup or a syrup flavored with grape juice, and cover with whipped cream. Tutti Frutti Sundae Mix sliced bananas, sliced oranges, whole cherries, sliced’ pears and strawberry syrup. Mix in desired proportions in a punch bowl and serve a large fruit spoonful over each serving of ice cream.
A Dish for Every Occasion
In this collection will be found suggestions for preparing many pleasing variations of ice cream, suitable for the simple home dessert. for serving when friends call, or for the more formal social occasions.
Surprise Sundae Place two Nabisco wafers on a small plate. Ou the wafers serve a helping of vanilla ice cream, and pour over it a serving of heavy chocolate syrup. Place two more wafers over the ice cream and add more syrup. Top off with chopped nuts and whipperi cream. Hot Bittersweet Sundae Make bittersweet syrup with one pound sugar; one-quarter pound cocoa and a cup and a half of water. Mix sugar and cocoa first. Add the water, bring to a boil and boil for five minutes. Serve either hot or cold, over ice cream. Maple Leaf Sundae Serve a helping of ice cream in a i fancy saucer. Around it place five macaroons. Over the» ice cream pour r a tablespoon of crushed pineapple i and a tablespoon of maple syrup. 1 Top with small pieces of maple sugar. Elizabethian Ice Cream Make an orange basket and in the bottom of each basket place a maca--1 roon. Line the sides of the basket I with split lady fingers. Fill the cenI ter with ice cream, cover the top with II whipped cream and sprinkle with nuts chopped fine.
These recipes have been chosen with the utmost care, and embody some of the choicest dishes rarely obtainable outside the more select ice eream dispensaries. None, however, are too laborate or difficult tor preparation in the average home.
Green Mint Punch Into a punch bowl put a half cup of Sge granulated sugar and the juice of thtee lemons. Peel a lemon and slice gg very thin. When the sugar has dis- £3 solved add the lemon slices, a half dozen sprays of mint, and an abundance of vanilla ice cream. Stir in a pint of ginger ale and enough of some harmless green coloring to give the desired green tint. rj Chop Suey Sundae Make a fruit mixture of pineapple Itcubes, strawberries, sliced peaches and red cherries. Flavor with cherry syrup. Serve this over ice cream, and in addition sprinkle w'ith chopped jpj nuts and a few slices of banana. Top with whipped cream. Cherry Parfait Mix thoroughly a large dish of vanilla ice cream and a ladleful of crushed cherries. Top off with either marshmallow or whipped cream flat- U ored with cherry syrup, and place a ijS cherry on top. Neapolitan Sandwiches Serve a slice of Neapolitan • Brick between two layers of Angel Cake or plain sponge cake. Cover with whipped cream and garnish with preserv- fc cd fruit or jelly. gjjj I
