Salmon Rice Cups Broadcast by: Mary Lee Taylor, Mar. 5
3/4 cup raw rice 1 1/4 cups Pet Milk 6 cups boiling water 3/4 teaspoon dry 3 teaspoons salt mustard 6 pieces pimiento 1/4 teaspoon pepper (optional ) 2 cups drained, 2 cups grated flaked salmon, American cheese★ freshly cooked or (6 ounces) canned (1 Lb. can ) 1 1/2 teaspoons grated onion

Wash and drain rice. Boil 30 minutes; or until tender in boiling water and 1 1/2 teaspoons salt. Drain and rinse with hot water. Grease 6 custard cups or individual baking dishes. Put a small piece of pimiento in bottom of each cup, if desired. Turn on oven and set at moderately slow (350° F.). Mix together grated cheese, cup milk, the dry mustard, 3/4 teaspoon salt and 1/8 teaspoon pepper. Cook over boiling water until cheese melts and mixture is smooth, stirring frequently. Fold in cooked rice. Divide mixture among greased custard cups. Meanwhile, put salmon in bowl. Add remaining 1/2 cup milk, the grated onion, remaining 3/4 teaspoon salt and 1/8 teaspoon pepper. Put equal portions of salmon mixture on top of rice mixture. Set in pan containing about of hot water and bake 30 minutes, or until firm. Turn out and serve at once. Serves 6.
