Mincemeat Custard Pie Broadcast by: Mary Lee Taylor, Dec . 23

1 cup water

1 package 1/4 teaspoon salt mincemeat (9-ozs.) 3/4 cup Pet Milk 1 cup water diluted with 9 tablespoons sugar 6 tablespoons water 3 slightly beaten eggs 3/4 teaspoon vanilla

Break mincemeat into pieces. Put in saucepan with 1 cup water and 3 tablespoons sugar. Cook slowly, stirring constandy until mixture is smooth, then boil 1 minute. Cool thoroughly. Turn on oven and set at very hot (450° F.). Line 9-inch pie pan with Unbaked Pastry (See Below). Mix together beaten eggs, remaining 6 tablespoons sugar, the salt, diluted milk and vanilla. Put cold mincemeat in bottom of pastrylined pan. Pour milk mixture carefully over top of mincemeat. Bake 15 minutes, then reduce heat to moderately slow (350 F.) and bake about 45 minutes, or until custard is firm. Cool, but do not chill before serving.

Unbaked Pastry 1 cup cake flour★ 1 1/2 tablespoons Pet 1/2 teaspoon salt Milk diluted with 1/4 cup cold 1 1/2 tablespoons shortening water

Sift flour before measuring. Resift with salt. Work shortening into flour with pastry blender, two knives or fork. When mixture has appearance of small peas, gradually stir in diluted milk. Roll out on floured board to 1/2 inch thickness. Line a 9-inch pie pan with pastry. Be careful not to stretch pastry. Pinch pastry with fingers to make fancy edge. ★To Substitute All-Purpose Flour for the Cake Flour, increase the shortening to 1/3 cup and increase both Pet Milk and water to 2 tablespoons each.
