IT is said eggs are preserved on a large scale in Paris by placing in wire baskets about a dozen at a time, and immersing them for about a minute in boiling water. A thin layer of the egg coagulates on the inner surface of the shell, forming a film impermeable to air.
SOME one says that when mechanics have land they gene rail}' give better cultivation than fanners they have more grapes, pears, strawberries, and water-melons, and earlier potatoes and cucumbers. They devote more care and labor to the small space, and so reap a larger profit from it.
Ax agricultural paper recommends to ladies totake a large sized pumpkin seed, carefully cut out the meat on the underside, put a narrow strip of fur around the edge, and fasten the strings to the sides, and they will have a bonnet in the pink of fashion. The broad end of the seed should be in front to keep off the wind and sun.
A GOOD SMOKE HOUSE.—The Western liural says: We lately observed a well-planned smoke house on the premises of a good farmer, worthy of a brief description. It was about six feet square, the lower half built of brick, furnished with an iron-lined door, and serving as an ash house and place for the tire. The upper part, about four feet high, besides the ascent of the roof, was made of wood. It was separated from the lower part by scantling joists, a space of two or three inches between them, through which smoke and air could freely pass, but sufficient to catch any iiam that might accidentally fall, and thus save it from the lire. The upper part, as well as the lower, was entered by a door from the outside this upper door may be kept lockad, except when admitting or withdrawing hams but the lower ma}r be unlocked, to attend to the fire, without any danger of the contents being stolen, as tiie thief cannot pass through the openings between the joists.
Ice Houses.
An exchange has the following plan for a family ice house. It may not be the best, but it is cheap. Almost anybody could mitke a house that would keep the ice until warm weather, but the ice usually fails about that time. It has been unusually difficult to keep ice this winter but this is an exceptional year, warm weather coming remarkably early. But here is the plan
A frame building, twelve feet square and eight or nine lect high, it is asserted, will be suliicientl}* capacious for all purposes/''The house should be supported on posts elevated a few inches above the ground, secure proper drainage, and should be constructed of three-inch joists, with an outer boarding, and having inside another series of uprights, also boarded, from six to ten inches lemoved from the outer shell. The tioor should be made of solid plank, and the space between the two walls should be filled with tan, sawdust, straw or chaff when a roof of good pitch is added, the ice house, is complete. A drain for water should be made fj om tlie iloor, and the space above the uprights, between a loose flooring and the pitch ol the rool, filled with straw or hay, or gome similar dry. porous material.* On the roof should be a ventilator, the top •-defended from the rain or snow.
The ice should be packed in one solid mass, the sides not reaching the inner walls of the building, but allowing a space of from six to twelve inches all around. The top ot the ice should be covered with straw, and the door should be like the sides of the building, or double doors should be made, one in the outer and the other in the inner wall. Morning-glo-ries* or any climbing vine" should be planted around the building, and should, be. made to creep up ths walls and over the roof, as an additional defence against the burning summer sun. A building of this kind, it is asserted, could be erected in one or two days by two men, even if they were not practical carpenters.
