I'laln Chocolate.—Scrape two ounces for squares) of good chocolate In a saucepan, add two tablespoonfuls of sugar and one-half cupful of hot water. Stir until the chocolate is entirely dissolved and looks glossy, then add one quart of hot milk. Bring fully to the boiling point, beat for three or four minutes with a whisk egg beater and serve immediately. Two tablespoonfuls of unsweetened or sweetened Whipped cream makes a pleasant addition. Plain C§c^a—Use four teaspoonfuls of any fliie prepared cocoa (that is. of some reliable make), four teaspoonfulq of sugar and one-half cupful of boiling water. Proceed exactly as In making plain chocolate, counsels the Woman's Home Convpanion.
Cocoa may bo used Instead of chocolate in any of the variations of the latter given above.
Shells.—These are the husks of the cocoa bean, and make .a very delicate drink. Boil gently one cupful oi shells in three pints of water for four hours strain, and serve with cream and sugar.
Brorua.—Broftia may be made as plain cocoa.

A wheelwoinan tells of something she discovered at a summer residence \gst year, which offers an excellent -suggestion for city riders. It was an inionnal and amateur school for cyclists. in wliiclu they were taught "a few fundamental facts about the construction of a bicycle and the care it requires. The school grew up from the habit of a few riders, to cluster about the well-informed wife of a dealer and "talk wheel" with her. There are only a few women acquainted with the mechanical character of a bicycle and its requirements, but the great majority are ignorant of such subjects. There are not many essential necessary to be learned about the materials used, why it is used, why certain parts are made one way and not another, what their duties are and what not to do as well as what to get the greatest amount of satisfaction ont of a wheel. While the women who know these things are comparatively few in the great mass of riders, there are enough of them probably for one to be discovered in every neighborhood and every social set, and for truly enthusiastic cyclists no neater idea could be suggested than to select au£h a-per-son as a mentor and have sociable gatherings on rainy days at which to talk wheel and exchange experiences. Such informal sessions of instruction at the country place referred:to were simply preliminary to afternoon teas, but all who attended are said
profited handsomely.

The Big Four's Death Trap.
FOR
many years the Big Four crossing at the Yountsville pike has been noted as a dangerous place. It was here the occupants of the Alamo hack were slaughtered a few years ago. The question of making it safe is again being agitated, and this time something should be done. Very frequently engineers forget to whistle for the crossing and several very narrow escapes have been reported from time to time. There is certainly some way to make the thing safe and not place the lives of the public in jeopardy. The railroad should be compelled to make the crossing safe. Let the agitation be kept up.

All this dry lumber the commissioners purpose to have toril out and steel substituted, thus making the building as near fire proof as possible. The floors have been so begten by feet seeking justice that they are worn away and new ones are needed These will probably be of tile. Rock park anywhere from midnight to 2 o'clock in the morning are making a nuisance of themselves which peaceable residents of the west end and Wabash avenue are preparing to^resent. It is not pleasant to be kept awake by a chorus of yells equal to those of a band of Sioux Indians on the war path for half the night. The noisy men and women had best be warned in time or there will be some arrests.
The County's Wealth.
E
ACH year there is a very perceptible increase in the valuations of property in this county. The total taxables for 1899 will be §19,630,605, not including the corporations, railroads otc. These will raise it probably two and a half millions more. The exemptions taken amount to §550,000. All this goes to show that Montgomery county is one of the best and fwealthiest^ in the state, and the man who lives here should be happy.
Wells' Condition.
The superintendent of the Cental Insane Asylum has written to the father of AlfredJ^Wells in regard to his present condition as follows: "Alfred Wells is no better nor is there any promise of improvement. His deportment, however, is excellent, and he does not give attendants any trouble."
This is sadly at variance to some information lately published in "reliable" papers.
